Spinach and Strawberry Salad

Just call us "Popeye the sailor man"! Toot, toot. Even my husband liked this recipe! I followed it exactly except for the poppy seeds, since I haven't found any in Korea yet. If only strawberries were available year round, then I would make this salad all the time. Who would have ever thought that strawberries and spinach are good together? I might try cutting the sugar in half next time just to try.

Spinach, Tomato, and Feta Egg White Omelette

This recipe is sooooo easy AND flavorful. I decide to sauté the fresh spinach and cherry tomatoes before cooking the egg whites. However, next time, my husband wants me to try it without the sauté step. My husband does not eat many veggies but he likes this recipe!!! I made it twice this week already! It's good with and without the feta cheese. By the way, I use garlic salt and freshly ground black pepper when I whisk the egg whites. I wonder if we can call this a Greek egg white omelette? "I'm strong to the finish, 'cause I eats me Spinach, I'm Popeye the sailor man! (toot, toot)"

Macaroons

This is a winner! This made exactly 12 macaroons using a 1-Tablespoon cookie scoop. Per previous recommendations, I cut the sugar in half (total 1/4 cup per batch) and I use unsweetened coconut flakes (because that's all that I had). In the next batch, I will try the 1 teaspoon of almond extract and unsweetened shredded coconut. Once cooled, I dipped half the macaroon into melted dark chocolate (see my photos). Let's just say that the 1st batch disappeared and now I can't wait to make a second batch.

Roasted Onions

So easy & so delicious! Based on previous reviews, I tried cutting it 2 different ways: first in half then I cut the 2nd half in thirds. Both had nice presentation and taste. I baked it with salmon on the same baking sheet, so I had to lower the temp to 200C (instead of 220C) for a longer time. I also peeled the onion before baking, so that I could eat it right away. Next time I'll try the option balsamic vinegar. Yum.
