If I could rate this recipe 10 stars, I would! DELICIOUS! I'm actually supposed to be writing a paper right now, but this bread was too good to not right a review for ;) I've got to put it out there that this is hands down the best specialty bread that I have eaten in a long time, and I don't even like bananas! To make this healthier, I only used 3 tablespoons of butter+ 5 tablespoons of oliveoil in place of the 1/2 cup of butter. I don't think that the flavor was affected much. I also subbed 2 tbsp cornstarch+ 2 tbsp water+ 1/2 tsp baking powder for the 2 eggs because of allergies. I set the oven to 330 as someone recommended and baked for 60 minutes. It still wasn't done, so I increased the heat to 350 and baked for 10 minutes. It came out perfect! This loaf came out of the oven 10 minutes ago, and half of it is already gone! :D If you're having any doubts about this, stop and just MAKE THIS BANANA BREAD! IT IS AWESOME!
