Pumpkin Hummus

I make traditional humus all the time and after trying this recipe, the pumpkin is a delicious addition. I used pumpkin puree that I made last Halloween and froze. The pumpkin gives the humus a rich warm color. My family is not big on pumpkin spices (cinnamon, allspice, etc), so I used them sparingly. If you totally omit the spices, the humus tastes like raw pumpkin. I will definitely make this recipe again since I usually have a lot of extra pumpkins.

Can't Tell They're Low-fat Brownies

Best Brownies Ever! I used applesauce instead of prunes, egg whites, and added walnuts. These were better than the regular brownies. My whole family loved them.

Maple Salmon

Our family of four likes salmon and we like sweet 'n salty flavor. So when I came across this recipe, I thought I'd have a hit. I was wrong. The maple flavor (I used real maple syrup) didn't go well with this fish. I followed the directions as written. We all agreed that we have had better salmon. Sorry, I won't be making it again.

Banana Nut Bread III

The recipe calls for two loaf pans. I found the loaves were too flat. Next time, I will use only one loaf pan and make the necessary changes to the time and temperature.

Salmon Salad

Caution: this recipe can be salty. I took notice of one of the reviews who mentioned it was too salty and I left out the seasoned salt. Still, I found it salty to my taste, but tolerable. The canned salmon I used had 240mg of sodium for 1/4 cup of fish. This recipe is delicous but be careful.

Banana Oatmeal Cookies I

This recipes needs a little salt. Add it when mixing the flour and baking soda. Also, I lighten it up by using egg whites, 1/2 cup butter, and 1/2 cup unsweetened applesauce. I left out the chocolate chips and used walnuts. Everyone love it!

Apple Cider Pancakes

I used Bisquick with the 2 eggs. I substituted apple cider for milk and added the spices suggested. It was fluffy and delicious with apple butter.

Artichoke & Spinach Dip Restaurant Style

I thought it was bland. The alfredo sauce I purchased (Classico) might have been the reason I didn't care for it. Perhaps a better sauce might do the trick. Need to experiment more.

Mom's Best Granola

My batch was over-cooked after 20 mins of cooking. Since I have a new oven (see other reviewer's comments), I think the time and temperature has to be adjusted. Also, I added cinnamon and used less sugar for more flavor and less sweetness.

Like many reviewers, I cut down the shortening and sugar. To make it even healthier, I used egg whites and and a mixture of white and oat flour. The results were fantastic.

Double Peanut Butter Cookies II

I wouldn't make this recipe again unless I made some changes. We found it had too strong of a honey flavor and an unpleasant texture and appearance. I like the idea of using wheat flour and yogurt. Perhaps with some tweaking, we will feel more satisfied.
