Bierock Casserole

My hubby said to give this dish 2 enthusiastic thumbs up. He couldn't stop eating it and absolutely stuffed himself! I did use less ground beef then the recipe called for but it was still stuffed very full.

Red Velvet Cake IV

It's surprising how many mixed reviews this recipe has received. My only problem was the baking time. At 25 minutes my was extremely soupy. I left it in for almost 20 minutes more. I've never made this kind of cake from scratch so I was a bit concerned with over baking it. I took it out maybe a little too early. the center was undercooked and I had a hard time taking it from the pan. It didn't look pretty, but it tasted good. I giggled the whole time I was frosting it so it was fun!! I liked the frosting. Maybe some people over melted the white chocolate and it was a tad bitter. I'll give it another try to see if it works out better next time.

Downeast Maine Pumpkin Bread

I receive raves on this bread. I eliminate the cloves because I'm not a big clove person. I also add craisins and pecans. It's delicious! I usually soak the craisins in very hot water for 20 minutes before I add, too. You can't miss with this recipe!

Loved this! I was looking for a recipe that didn't call for pineapple and this fit the bill. I did add 1/4 t. of nutmeg- just cause I love the flavor of it. It was delicious! I couldn't stop eating it and I didn't even frost it. I imagine with the cream cheese frosting I would have eaten the whole thing alone.

Chunky Potato Soup

Delicious. Made mostly as is, but didn't mash the potatoes any and was out of carrots, but I usually always put carrots in my potato soup. Everyone loved it and several asked for the recipe. I took it to work on a cold autumn day.
