Sweet Potato and Black Bean Chili
I adjusted this recipe for 6 servings. It was a hit with my husband and 3 adult kids that dropped in to visit. I loved the roasted sweet potatoes and it was so worth that step. I followed the recipe exactly as written except I did not have cornmeal and omitted it entirely. I added a 3rd can of beans (pinto) which gave the chili more variety, and also added 1 Tablespoon of chili powder. I also cut up 4 boneless chicken breasts, sautéed them in olive oil, salt and pepper, then followed the recipe with the onions, etc. I will make this version again. Thanks for all the comments and a good recipe!

Best Tuna Casserole
This recipe is very good, and I added the following ingredients as well. I used 1 1/2 pounds DeCecco brand Cavatappi pasta (cooked al dente), 12 oz. tuna, along with 2 cans of a condensed mushroom soup, added 1/2 cup milk, 1/4 cup real mayo, 3 oz. crumbled herbed goat cheese, chunked sharp cheddar, chunked white cheddar, mixed it all together, along with adding frozen corn instead of peas. I shredded the rest of the cheddar on top, added freshly grated parmesan, and crushed potato chips, kettle brand. We are a family of 6 and everyone was pleased and went back for seconds. I love this website and get many good ideas and helpful hints. MALLORY

Pumpkin Black Bean Soup
Wow! I have made this recipe a couple of times. The first time, I followed the recipe exactly and it was delicious. But the second, I added 4 carrots in generous chunks, a cup of frozen organic corn, an extra can of beans, and 2 chunked scrubbed organic red potatoes with the skins. I also added 1/4 tsp. cayenne, 1 teaspoon cumin, a few red pepper flakes, and 1 bay leaf. After adding the ham, it was more like a soup/stew, which we enjoyed because it was so chunky. This recipe is so versatile that you can make additions.
