Real Homemade Bagels

Best bagels. I only use 4c of flour based on the other reviews. These are easy and fantastic. I'll never buy bagels again.

Butternut Squash and Spicy Sausage Soup

Made a few modifications. Spiced the sausage with cayenne pepper, crushed red pepper, garlic, sea salt and pepper. I added baby bellas, and celery with the onions. I made jasmine rice and used 1c. sour cream in place of the cream.

Apple Pie by Grandma Ople

I tend to read the reviews before I make these things and I try to read positive and negative reviews to get an idea for what to expect. Can I just tell you that those who hated this recipe because the caramel was too runny or too stiff didn't know how to work the caramel. There were also complaints of a runny pie. Let it cool completely, that "watery" deal is the caramel and it thickens as it cools. I made only 2 slight changes to this recipe 1. I added some cinnamon (about a tsp) to the caramel blend and poured this over the pie before adding the lattice top, then brushed it on the top of the crust. This was the most fantastic apple pie ever... and that's saying a lot because my grandma makes a mean apple pie. It was fantastic. if you don't let the caramel boil then it will be too watery, if you let it boil too long it will get stiff... it's a timing thing. It was beautiful and tasted great. I wish I would have taken a picture.

Three Cheese Garlic Scalloped Potatoes

This is really a 5 star after making modifications. But I wanted to rate the recipe base as a 4. We loved this. I used suggestions of others and did 1 c. skim and 1c sour cream (I did not use fat free). I also used minced garlic and i mixed it in with the milk/sour cream mixture, along with salt and pepper. The only thing I only cooked it for 1 hr 15 min. Next time we'll do a full hour and a half. We are eating the leftovers tonight with meatloaf.

The Best Chicken Fried Steak

I am giving this 4 stars as I did make some changes due to the reviews. First I seasoned the steaks with salt, garlic powder and pepper. I also used the same seasoning combo in the flour. No measurements I just shake some in mix it up and smell. I also added more hot sauce the "batter" was orangeish. Second, I didn't use crisco, I used vegetable oil. Third, I was not NOT wasting 4 cups of milk (milk is expensive) for gravy. That's ridiculous, I used 2 cups milk and a pouch of brown gravy mix as well as a little oil from the bottom of the pan. added pepper. This was a huge hit. My husband wants it in the rotation, it didn't take long to make, my 17 month old daughter was a "clean plater" and wanted seconds. I loved the flavor and crunch, and liked the gravy very much, w/o the modifiations the gravy would have been bland. My husband did request that I make country gravy next time just because he likes country gravy.

Chicken Dijon

Based on Kat's review this recipe was 5 stars! I changed this quite a bit using 3/4 cup of broth and 1 1/2 cups cream no flour, I also seasoned the chicken before pan frying, I sprinkled with salt pepper and garlic. I also added about a teaspoon of tarragon. My oven will only go to 170, so that's what I used to keep everything warm while the potato croquettes and brocoli cooked. Everything was fantastic Huge hit!! My husband had seconds and took leftovers in his lunch. My 1 year old ate every bite. We used some of the sauce to 'flavor' her broccoli and she ate every bite. She's always a pretty good eater, but last night she ate EVERY single bite, without feeding the dog any!

Potato Croquettes

This was a HUGE hit at my house. My husband raved about them for the entire evening. My 1 year old LOVED them. I made them with instant mashed potatoes. I did not add any butter or milk, made sure they were stiff, added all of the rest of the ingredients, rolled into "meatball" size balls then rolled in bread crumbs. I placed them on a cookie sheet and once all were rolled I pressed them down just a bit to make them a bit flatter. The cakes were about 1 to 1 1/2 inches in diameter. I put them in the fridge for about 30 minutes to stiffen futher. Instead of pan frying these (due to eveyone saying how they fell apart) I knew dropping them in the deep fryer would seal them instantly. So I used oil at 350 and each batch of 5 took about 3-5 minutes to be the desired color and crisp. I drained them on paper towels. They were FANTASTIC! We will be making them again, easy and delicious.
