Cucumber Sandwich

Maybe I just don't like sandwiches, but I thought this was a bit bland. I might try it again with peppers and pickles in a tortilla.

Stir Fried Sesame Vegetables with Rice

Very good. I used the broth as a sause to coat the veggies and thickened it with arrowroot. It was a little too heavy on the ginger, but I can fix that next time. I also added breaded garlic tofu that added a nice variety to the stir fry. Yum!

Make Ahead Lunch Wraps

I really liked the concept of this recipe, but was so disappointed with the flavor...there was none. But that can easily be fixed. I will try it again with taco seasoning and/or a different filling from another recipe.

Zucchini Herb Casserole

Very good. We had them with tortillas and cut the amount of cheese in half. I will definately do this dish again and try it with olives, maybe beans, or what ever else I have in the kitchen.

Cheesy Polenta Casserole

Okay. This was pretty good. I really liked the taste of this dish, but the texture was not so great. It was kind of mushy. I did add zucchini, mushrooms and onion to it and that helped the texture greatly. I would do it again, but play with different options for the polenta.

Fry Bread I

Pretty good. It was a bit bland, even though it was fried. Also the finished bread ended up tough, which could have been my fault if I over handled the dough. We ate the bread with Taco Soup and it was good dipped in the soup.

Vegetarian Burrito Casserole

Very Good, but required some alterations. I don't think that the salsa was necessary. The tomatoes took care of that. We also omitted the faux meat and added corn in its place. Used Ancho chili powder and reduced it by half a teaspoon and it was still plenty spicy, but not hot. I also didn't use all the cheese. The casserole was plenty rich enough without it and it made it healthier. Will definately do again!

Vegetable Pasties

I really enjoyed these, but the guys thought they we're missing something (a bit dry). So, they ended up dipping them in ketchup and BBQ sauce...you see what I put up with! But I will definately make them again, but tweek with the recipe.
