No-Cream Pasta Primavera

This is a great idea for a meatless meal that is filling. I did add a bit more of each veggie like the whole red pepper instead of half. I also forgot the balsamic vinegar and it was still great with just the lemon, olive oil, butter, and fresh herbs. All of the work is in chopping the veggies. Chop them all first, get them in the oven, and then start the pasta. While it's all cooking saute' the onions and garlic. It will all be ready to toss together that way.

Good Old Fashioned Pancakes

This is a great basic pancake recipe to keep handy. Just as easy as from a box but without any additives. I didn't use any salt but did add some vanilla. We sometimes add chocolate chips or apples and cinnamon. Probably not enough for a modern 8 servings, though.

Easy Granola Bars

Perfect recipe for an easy snack! I have been making these all the time with different requested add-ins. Chocolate chips and hazelnut (or walnut) seem to be the favorite. Add a little wheat germ for a great snack that can be made ahead of time for the school week. They do seem to get better the day after cooking, though.

Jeff's Hot Dog Chili

Great for a fast dinner. I did not add any water, browned and drained the beef first, then added the ingrediants as listed. I used whole wheat buns and served with baked sweet potato fries on the side.

Broccoli, Rice, Cheese, and Chicken Casserole

The ingredients are good but need to be a bit more fresh as a lot of reviews have said. I sauted the onions first, seasoned chicken (not canned) with salt and pepper and browned it in a pan, and used 2 cups of shredded casserole cheese instead. The microwave bag of rice was perfect to mix in the pan with all of those ingredients and some frozen peas,cream of chicken, butter, and milk. Old school comfort food, the family all had seconds!
