Black Bean and Couscous Salad
This salad was amazing! I added double the lime, just for a little more kick. If I were to change anything, I would use the juice of one whole medium size lemon. The flavor was great, but I didn't want to add any salt, by adding extra lime, it gave just enough acidity to kick it up a notch...so to speak. We served it with the adobo steak and it was a perfect combination, tomorrow, we're serving it up with the prawns with mango and avacado salsa...YUM! I love allrecipes.com! I tell everyone about it! So should you!!!!

Fresh Tomato Salad
YUM-O, It was perfect complement to Surf & Turf - Gulf Coast Style also found on allrecipes.com Perfect blend of flavors! This was like tabouleh with out the bulgar wheat. I used an orange bell pepper instead of green, and green onions instead of regular onion, rather than vinegar, I used lemon juice. I used some Cavenders seasoning instead of salt, it's a greek seasoning salt. I only used one garlic clove and mixed it in a small container with the oil and lemon juice and seasoning. I let it sit in it's own juices and chill for about an hour before serving. Wow, the flavors really popped! The only thing we would do different next time, or when using the leftovers, add some feta cheese. Great for lunch the next day! We will definately make this one again. This is our new summer favorite!

Surf and Turf - Gulf Coast Style
This meal was great for a warm summer night. My fiance and I had a neighbor over for dinner and we all really enjoyed it! My fish rack for the BBQ wasn't big enough, so I ended up making a big foil pouch. I cooked it on one side for 10 minutes and then 8 on the second side. When we split the pouch open the bacon was cooked but not enough, so we threw it on the grill for a minute or two then chopped it up and sprinkled it over the cooked fish. (FYI - 1 pound of snapper / rock fish is about 5 fillets) Delicious. We served it with the Fresh Tomato Salad recipe, (also found on allrecipes.com) which was a perfect pairing. YUM! We'll definately make again!
