Lemon Sponge Pie I

This was delicious! The only issue I had was the bottom and the lower sides of the crust did not get done.

Almost Eggless Egg Salad

I would have preferred that the salad stay together more, but the important part is that this was the best tofu salad I have ever had and was very cheap to make. This is a real keeper! Thank you, Jill!

Fava Bean Salad

Zucchini Casserole II

Swiss Cheese 'n' Onion Quiche

My husband loved this! I did not have any because I made it just for him. I made two changes. The half and half was replaced by light soy milk, and I use part onion and part red pepper to replace the one onion. It took 45 minutes once I put in on 325 degree. That might have been I used soy milk instead of half and half. One thing I was really pleased with was that the crust did not burn. Unfortunately, in the past, I have had problems with that. This recipe is a keeper. I will make this again and again.

Potato and Broccoli Casserole

This recipe is very tasty but the potatoes must be baked before you put them in the casserole or they will still be raw after the 45 minutes of baking. I also suggest putting the temperature up to 350-375.

Chicken Biryani

I do not know when was the last time I made Indian food from scratch so as I was making this I did not know if it was going well or not. However, in the end it was delicious. It does take time to make but if you have preparations made in advance, it is not so bad and is well worth it. Thank you for this delicious recipe. Please send more.

Awesome Carrot Muffins

These are the best carrot muffins I have ever had! I used the advice of some and only added half the salt. I used 3/4 cup applesauce sweetened with splenda and 1/4 cup oil. I used egg replacer. I only had about 2 1/4 c. carrots grated so that is all I used. I would say that 3 cups of carrots would not be too many and next time I will make sure I use 3 cups of grated carrots. The raisins sweeten it enough that you do not need extra sugar or icing, in my opinion and I may even use less salt each time until I see if it actually needs the salt as I am not a salt user. This is a incredible recipe and very healthy if you make certain adjustments.

Baked Spinach

I used 6 oz. of fresh spinach, egg replacer instead of eggs, fat free milk instead of whole milk, swiss cheese instead of cheddar,. I left out the salt,and flour. and used just a sprinkling of dried parsley and added some dried dill. I did not use any butter or margarine. Instead of bread crumbs, I used crushed Ritz(cracked pepper ritz crackers). Instead of layering it, I just mixed everything together except the crackers..those I put on top. I sprayed the pan with Pam. It was delicious. The only drawback some might find is that the bottom of the dish is a little watery but that was not a problem for me. I absolutely loved it!

Gary's Stuffed Mushrooms

I used real crab meat for this. First of all, there was way too much stuffing for the mushrooms. They were very greasy. I just finished eating some and they made me sick. They did not taste good. There is too much breading. It tastes like one of those crab cakes that have tons of stuffing with a little crab taste. You could taste the crab meat but you could taste the stuffing more. I will not attempt to make this again.
