Spinach Mushroom Omelet

The recipe was delicious, I'm actually surprised I had everything for it in my fridge and pantry. I only gave 4 stars because there are way too many vegetables to make this an omelet. It completely falls apart and ends up a scramble. Still good though. I'd probably use this many veggies for a 1-whole-egg-and-3-egg-white-omelet for myself AND a bigger omelet for the hubby. Or of course it's always nice to prep veggies at the beginning of the week so they're ready when you want 'em!

Roast Sticky Chicken-Rotisserie Style

This recipe was ok. The chicken was good, but it tasted like some other roast chicken recipes I've made in the past, but without the extensive work this recipe required.

Basic Chicken Salad

Wasn't the absolute best chicken salad I've ever had, but it was good. I'd make it again. It was quick, easy, and got the job done. I always keep some canned chicken in my pantry and that is what I used. It made the salad a little gritty, but as the recipe does not specify to use canned chicken I did not take that into account while rating this recipe. The ingredients are simple and common and make it easy to whip up and take on a picnic!

To Die For Blueberry Muffins

I tried the blueberry muffin recipe that came with my Ninja blender and ended up throwing them away because they were so gross. I tried this recipe and the muffins were delicious! I did use frozen blueberries, but what I did was put them in a ziploc bag, then put them in the sink filled with cold water. When they were defrosted, I cut a corner off of the bag and drained the excess juice and then folded them into the batter. They worked just fine! I also read some reviews of people having trouble with their muffins sinking, so I took the advice of the most helpful positive review by Chef Joy and altered the topping to her recipe as follows: 2/3 cup brown sugar, 1/4 cup flour, 1/4 tsp cinnamon and 2 tbs butter. This made a lot! Way more than what I needed for the muffins.

Zesty Quinoa Salad

Amazingly delicious! I followed some recommendations by other reviewers and used 1 1/4 cup quinoa for a dryer outcome. I also added diced avocado before I served it. Everyone loved it!

General Tsao's Chicken II

AMAZING! I wasn't really sure why I was frying the chicken twice, but it came out absolutely delicious. My husband said it was better than any General's chicken available near us! I did take the advice of some reviewers and double the sauce, but next time I will triple the sauce for the amount of chicken I had. I usually cook more than necessary because my husband works long hours and usually takes two helpings of whatever I make for dinner with him for his lunches. I will absolutely be making this again! I served it with chow mein and steamed vegetables.

Aw-some Coleslaw

Delicious! I always try to make it the day before we are having it, or the morning of, so all the flavors can come together nicely. My husband and I love the vinegar taste too, so I always add a ton more of that!

Turkey and Quinoa Meatloaf

I just made this tonight. It was good, but the topping made it very sweet and taste kind of funky. I love the idea of putting quinoa in it. Next time I make it I'll do a different topping that doesn't involve brown sugar.
