Chef John's Baked Lemon Pepper Salmon

We have made this twice already, once with Wild caught and once with farmed. I did not purchase the miso paste and didn't add quite as much ground pepper but I love this sauce. If I can find a way to make it a little thicker I am going to double the sauce. We love this!

Seven Layer Dip II

Truly Outstanding! I am a very self critical cook and 99% of the time think I could have done something different to make it better. Not this time. I assembled it on a large dinner plate and flattened it a little so you could scoop. Looked very pretty and tasted great. I only used 1 T of the lime juice and didn't have quite enough sour cream so used some cream cheese spread with it. Grated my cheddar. Didn't use cilantro; ground coriander instead. Recipe called for a "bunch" of green onions, I used 5 green onions. I recommend a thick sour cream and a sturdy corn chip.

High Temperature Eye-of-Round Roast

Tried this last night and it was excellent. I was concerned because some of the reviews said the meat was raw and cold at the end. I have a very old electric oven and had no problems. During the 21 minutes at 475 I could hear it sizzling and it smelled good already. I can't imagine how sitting in a heated oven after that it could be cold and raw! I wonder if some of the reviewers were opening the oven to check the thermometer??
