Fluffy Pancakes

Pancake Tuesday and no pancake mix. So, I thought I could make some from scratch. I found this recipe and will never buy pancake mix again. They were great!

Buttermilk Salad

I've been making this for awhile - great recipe. I change the type of jello for each season (ie. cranberry jello for Christmas, orange for Halloween, etc.). It's always a hit and disappears very quickly.

Chocolate Crinkles II

These cookies are amazing. I followed the recipe exactly and they turned out great. They are rich and chocolately almost the consistancy of brownies. I won't need to worry about where to store them because each time someone passes the cooling racks in the kitchen they take another cookie. Will definately make these again.

Banana Oat Muffins

I followed the recipe exacting and although they tasted great they were quite dry. Maybe using applesauce as others have done will make them a little more moist. Worth trying again.

Black Bean and Couscous Salad

Was looking for a side-dish that was different than the old stand-bys and found this recipe. Not trying couscous before I heard a lot of 'eeewww what is that stuff?' However, I got them to try it and heard, "This stuff is pretty good."I followed the recipe as is and it was a hit. Will definately make this again.

Jalapeno Jelly

Tastes great! As we enjoy spicy food I left the seeds in....I did not strain it....In a ramekin I put a piece of cream cheese and spoon the jelly over top...I usually cut tortillas into bite size pieces, place them on a cookie sheet and toast slightly in the oven then serve with the jelly....the tortillas have less calories that some crackers, they do not have any salt or fat making them a healthier choice than some crackers....and the taste of the tortillas does not over-power the jelly...great as an appetizer with friends.......

Big Soft Ginger Cookies

Amazing cookies. The combination of spices is just right....none of them overpowering. They seemed to taste even better after sitting for a few hours, however, most of them didn't last long enough to find out. Most of the family don't even like ginger but with just a hint of it the cookies didn't last too long. This has moved into my recipe box.

Carrot Cake III

Oooops! I wrote a review for this recipe and after I had posted it I realized that I reviewed the wrong recipe. I did Not serve this with crusty bread and grated cheddar. This carrot cake was excellent! I used 2 round pans and made it as a double layer cake. I substituted 1/2c apple sauce in place of 1/2c oil. Cooked them for about 25 min. until knife came out clean. There was enough frosting to put between the layers. Will definately make this again.

Best Cream Of Broccoli Soup

Amazing! I made this for dinner last night and it didn't last very long. I guess I'll have to make 2 batches the next time which I don't mind because it was so easy to make. As my daughter and I are vegetarians I made one change. Instead of using 3 cups of chicken broth I used 2 vegetable boulion cubes and 3 cups of water. It really tasted great. Another positive about this is it partially covers 1 serving of vegetables and 1 serving of milk as outlined on the Food Requirements pyramid(depending on how much you eat). I'll be adding this to my recipe file.

Sean's Falafel and Cucumber Sauce

I first tasted falafel in a Greek restaurant and really enjoyed it. When I came across this recipe I figured it wouldn't taste as good as the resaurant but I tried it.......I was wrong.....not only was it easy to make it tasted great. Being a vegetarian I now have another dish to add to my menu. For the meat eaters I prepared souvlaki as well. I made a Greek salad and along with the falafel (and souvlaki) stuffed it all into a pita. It was very, very good! I've made it tonight again so I'd better get in there before it's all eaten.

Mexican Bean Salad

I tasted the dressing before I poured it onto the salad and wasn't too sure about it. I read the reviews and each one raved about it so I took the chance and poured it on. I was pleasantly surprised how good it tasted and was even better when chilled for awhile as the flavours all meld together. I'm a vegetarian so I now have a new dish that's high in protein. Thanks for the recipe.

Slow Cooker Lemon Garlic Chicken II

My daughter and I are vegetarian but my son and husband thought it was great and asked me if I'd make it again sometime. I served it with broad noodles for my son and rice for my husband (feels like I work in a diner) along with a garden salad. Another great slow cooker recipe.

Italian Dressing Mix

This recipe is great! We use a lot of salad dressing so now I won't have to buy it. I increased the recipe so now if I need dressing I can make it quickly. The only changes I made were to use olive oil instead of canola and reduce the salt to 1 TBSP. Thanks for sharing.

Thai Peanut Chicken

This recipe was a hit with everyone. I made 2 batches - one with chicken - one without for the 2 vegetarians in the family. Both batches were enjoyed. I doubled the sauce which worked out well. I also mixed in some green and red peppers, water chestnuts and baby corn. It not only looked colourful but tasted great. I served it over rice and also soft chow mein noodles which I blanched, strained, then stir fried briefly in any sauce remaining in the wok after the chicken and vegetables were removed. Great recipe. I will definitely make it again.

Seared Scallops with Tropical Salsa

Family wasn't too sure about this dish when they first saw it but thoroughly enjoyed it. I served it with rice and doubled the amount of salsa and it was all eaten. Will make it again.

Cranberry Hootycreeks

This recipe was great. The first time I made them I followed the recipe exactly. The next time I used macadamia nuts instead of pecans and turned out great. I also tried them with white and semi-sweet chocolate and these too were great. Everyone enjoyed them and were eating them while they were still warm. Will continue to make these. I made a few jars for friends and kept a few for us as it makes it easy to make them in a short time.
