Slow-Cooker Posole

This is an all-time favorite in our house! I make a double batch at least twice a month. I make it vegetarian by omitting the pork (and oil). I use green enchilada sauce and substitute vegetable stock for water. We serve it over cilantro lime rice and sauteed bell peppers and onions, and top it with cheese since this is the way we fell in love with posole at that famous burrito joint... This posole is better though! Don't forget some warm corn tortillas to get every last drop from the bowl!

Banana Crumb Muffins

these are phenomenal! i've made them several times following the exact recipe and they always come out perfectly. i personally find them to be better the next day after they have cooled and been stored in a plastic bag... they seem to become more moist and flavorful this way. this recipe is definitely a keeper!

Lazy Lasagna II

Wow! So easy and so tasty!! I assembled mine the night before (while the ravioli were still frozen!) and it took a total of about 5 minutes. We made a meatless version and doubled the sauce as suggested by other reviewers. Turned out perfect! My boyfriend requested that this become a "staple" among our meals. Thanks for this simple, delicious recipe... I'll be passing it on to all my friends!

Roast Sticky Chicken-Rotisserie Style

Absolutely fabulous! I made this recipe for Easter a couple years ago for some family members who can't eat ham. Everyone loves it and it is now the preferred meat at all of our gatherings! Thanks for this wonderful recipe. I'd recommend rubbing the seasonings under the skin... it flavors the meat more.

Beer Bread I

Wow! Delicious and so easy!! I definitely agree with those who say that this beats Tastefully Simple's mix. Didn't have any self rising flour so I substituted 3 cups flour, 3 tsp. baking powder and 1.5 tsp. salt (as suggested in another recipe found online). I'd love to make a bunch of mixes and give them as gifts!

Pot Roast in Beer

what a simple, delicious recipe. i added a bag of frozen roasted potatoes about an hour before serving. my boyfriend confused my request to slice up the roast and diced it into bite sized pieces... but it turned out to be a great beef stew. my mother was visiting and requested the recipe. thanks! this one's a keeper!

No-Peek Beef Stew

wow! what an easy delicious meal!! i modified it a bit based on other recommendations. i dredged the beef in flour first and seared it in a pan with a tablespoon of oil (to keep the juices in.) i didn't have any cream of mushroom soup so i used cream of potato. i also added a few cups of frozen roasted potatoes during the last hour of cooking. this was such a nice meal to come home from work to. my boyfriend loved it!

House Fried Rice

Delicious! I tried a vegetarian version of this quick, tasty recipe. We didn't have any garlic cloves in the house so I used a bit of garlic powder. It turned out very tasty!

Famous Restaurant Alfredo Sauce

I have been searching for a good alfredo sauce recipe (for my boyfriend who loves fettuccine alfredo) and I have definitely found a winner with this one. The flavor was excellent! The only reservation my incredibly picky boyfriend had was that the cream cheese stayed slightly lumpy (I didn't even really notice!). I think next time I will use a double boiler to melt it down slower. I paired this meal with some homemade focaccia bread and a bottle of red wine. Overall, this recipe is nothing short of outstanding - not to mention so quick and easy!
