Easy Add-In Macaroni and Cheese

This dish is excellent for a starving, busy college student like myself. Adding a can of drained tuna or a cup of cooked shredded chicken (I use store-bought rotisserie chicken)and canned peas and carrots, this is a complete meal with tons of lefovers! Also freezes beautifully!

Thanksgiving Leftover Casserole

I made this in the february, but it was still easy with shortcuts like mashed potatoes from flakes and chicken breast. I did add a little more (packaged)herb seasoned dry stuffing over the meat and sauce (it looked too soupy) and my family loved it. I might have to rename this-its too good to make once a year.

Award Winning Soft Chocolate Chip Cookies

Wow! I took these into work and all 72 disappeared in one day--people were smuggling them out:D The texture is awesome, a little crispy on the edges but soft and chewy. I can't wait to try it again with different pudding flavors!

Cream of Pumpkin Curry Soup

Oh, this was heavenly! It tastes so exotic. I wouldn't skip the last step of blending the soup even though it's extra cleanup--it really makes the soup smooth, slightly thick and oh-so-creamy! I might throw caution to the wind and try it with cream instead of half-and-half, to really spoil myself :)

Awesome Slow Cooker Pot Roast

This was delicious! I used golden onion soup mix. I just couldn't find a 5-6 lb roast, so I used a 3 lb one, and added some pearl onions. Wonderful.

Pumpkin Zucchini Bread

Turned out very well. I used extra zucchini--close to 1 3/4 cups, a mix of Splenda and brown sugar, and used a 9x13 inch pan. I had to cook it for close to an hour. Very tasty, although the inside was more creamy than bread-like, even with the shallower pan and longer cooking time.

Country Apple Dumplings

I tried this recipe last night. It was amazing! I halved the recipe, used 1/3 cup white sugar and 1/4 cup brown sugar, and I added half a teaspoon of vanilla and a pinch of nutmeg to the butter mixture. I used a square 8x8 pan, and I was a little nervous that there was way too much liquid between the butter and the half can of Mountain Dew. But, after baking for 45 minutes the liquid reduced a lot and after cooling for a bit it was more syrupy. They taste wonderful, but I may try cutting back on the butter, sugar and soda next time to try and save calories. They were pretty sweet as I made them.

Chicken Enchiladas II

These were really good with some modifications! I doubled the recipe except for the tortillas. I sprinkled the chicken with southwestern seasoning before sauteeing it, and then shredded the meat. I used one can of cream of mushroom, one can of Campbell's chicken verde, and added a small can of chopped jalapenos to the (doubled) sauce. Before placing the tortillas in the dish, I spread a little of the sauce on the bottom so it wouldn't stick. Last, I used whole wheat tortillas. Delicious and spicy!

Pumpkin Cheesecake Bars

This was my first attempt at baking and these tasted amazing. I baked them for about an hour in a 9x13 pan. Be warned--these bars are extremely rich and a little goes a long way! The crust is definitely a keeper, I may try it in other recipes.

Crab Stuffed Flounder

I didn't have flounder, so I used tilapia. Since the mayonnaise topping got mixed reviews, I used it on two of the fillets and topped the other two with cheese. Both were very nice, but I prefer the cheese. Either way, the fat content probably outweighs any health benefits of the fish! Thanks for the recipe.

Great Mac and Cheese

Delicious and easy. I added a little chopped roast beef. You may want to partially cook the pasta in water first, since it ends up little firm. Stir frequently to prevent sticking and scorching.

Slow Cooker Chicken Taco Soup

This was pretty good, but it seemed to be lacking some depth, and that's probably because after adding all the other ingredients, my crockpot was filled to the brim and I couldn't add chicken broth or beer.. I used spicy mexican tomato sauce, spicy taco seasoning and chicken thighs instead of breasts. I also added a small can of chopped jalapenos, and forgot the onion. Still, it's an easy dish and very healthy.

Roasted Vegetables

This made my house smell amazing! I omitted the white potatoes and added zucchini. I had to use regular vegetable oil instead of olive oil since I'm fasting, and I forgot that I ran out of balsamic vinegar. I seasoned the veggies with the fresh herbs, salt, pepper and several whole garlic cloves and it was really nice! The only thing was the sweet potatoes were a bit undercooked while the squash was a bit mushy. Next time I will chop the sweet potatoes into smaller pieces and the squash into bigger ones. Delicious, though, thanks!

Janet's Chicken Casserole

This recipe tasted okay. I think that there is too much condensed soup mixture, so it's sort of goopy with a wierd aftertaste (condensed soup straight from the can is not too tasty--this is almost the same!). I think I would use more "starch" to balance out the sauce, like extra stuffing, mashed potatoes or maybe rice. More veggies would have been good, too.

Salisbury Steak

I'm not too sure about this recipe. The sauce uses a lot of Worchestershire, which is kind of overpowering. The ketchup tempers it a bit, but I'll try cutting it down next time. These steaks were very dense and heavy.
