Super-Simple, Super-Spicy Mongolian Beef

This is a wonderful recipe that I make often. I prepare everything about 6 hours before cooking and let it marinate. I also add broccoli, water chestnuts and a little extra garlic. I cook the broccoli in a hot wok with a little peanut oil just until bright green. I remove the broccoli and put it in a bowl off to the side. Then I cook the meat with the marinade until well done. It seems to tenderize the meat better. I add the broccoli back to the wok after the meat is done and then toss in some sliced water chestnuts and the green onion right at the end. Then just heat through and serve over rice. The veggies will be crisp and the meat is so tender. My family loves this recipe!

Awesome Slow Cooker Pot Roast

I used a 3 1/2 lb. roast and only one can of soup for this dish. I also salted, peppered and floured the roast and browned it in butter before adding it to the crock pot. Everything else as written. My house smelled so good all day-I couldn't wait for dinner. It tasted really good. A nice deep flavor. I served it with sweet potatoes and roasted brussel sprouts!! Yum!!

Iced Pumpkin Cookies

My daughter has made these several times now. They are really good. Soft and cake like. They are a big hit at my house. We leave them out on the counter and they are gone in less than 24 hours!! Yum!

Chicken Tetrazzini IV

Very tasty! I sauteed a package of fresh mushrooms, 2 cloves of garlic and a chopped red bell pepper in a pat of butter. Then I substituted the heavy cream with one half heavy cream and one half fat free half and half. Then I mixed everything together. The fresh mushrooms were wonderful. I can't even stand the smell of mushrooms in a jar and the bell pepper gave it some color. I also added a pinch of red pepper flakes for some zing. I will make this again!!

Chicken Piccata I

I made this for dinner last night and it was wonderful. I used wafer thin pork chops instead of chicken which didn't make any difference in the flavor of the meal. I did need at least double the amount of egg, flour and breadcrumb mixture. The flavor was fantastic and my family ate it up!

Cracked Sugar Cookies

This is my favorite sugar cookie recipe from this site. I don't usually make any recipe that only has a few reviews but I'm glad I did! I was looking for the perfect soft cookie recipe and I found it. The first time I made them I followed the recipe exactly and they turned out very tasty but the texture was a little off. There were a lot of holes in them so the second time I made them I mixed the vanilla extract in with the wet ingredients and then sifted all of the dry ingredients together well in a separate bowl and then blended it all together with an electric mixer. They turned out perfect! Sugary sweet and soft. Make sure you take them out of the oven before they brown so you get a soft cookie! This is my go to sugar cookie recipe now.

Bright Blue Monday Cake

I just made this and had one piece hot out of the oven. The blueberries smelled so good I couldn't resist. As soon as that piece was gone I went for another! I made it exactly as directed except I used butter instead of oil in the batter and butter instead of margarine in the topping. Usually I add more fruit than called for in recipes but 2 cups was the perfect amount in this case and the amount of topping was generous also. It was soft and very flavorful. Not too sweet.

Chicken with Prosciutto Spinach Cream Sauce

Holy cow this was good! Restaurant quality for sure! The only thing different I did was pound the chicken to about 1/2 inch thick and added 5 cups of spinach. I wanted to pour the sauce in a glass and drink it! Yummy!

Chicken Chimi in the Oven

This is one of the rare recipes that I make over and over again. It's really that good. I have made it with the onion and garlic and sometimes I just rely on the onion and garlic that's in the salsa that I use. I always add the amount of spices called for too. I usually add a little shredded cheddar on top of the refried beans and have never found that I need to secure the tortillas with a toothpick. If we ever have leftovers they never go to waste!

Pico de Gallo Chicken Quesadillas

I pounded the chicken fairly thin before sprinkling it with taco seasoning and then grilling it. I also used a good quality store bought pico de gallo instead of making my own just to save time. I then cut the chicken into strips and added the pico and onion and pepper combo. It was very good but seemed to be lacking a little salt even after the taco seasoning but that's an easy fix. I felt like I was at my favorite Mexican restaurant!

Spaghetti Carbonara II

This was very good. Full of flavor and easy to make. I used low carb pasta to cut back on the carbs and no one could tell the difference. Especially nice since my 19 year old daughter won't eat beef or sausage and I'm always looking for recipes the whole family will like.

Beat and Bake Orange Cake

I made these into cupcakes. I used a little more orange zest (about 1 tbsp.). They had a really nice orange flavor but were a little dry. I will make a cake with the recipe next time to see if that takes care of the dryness. The frosting was REALLY good.

Deconstructed Chicken Kiev

Loved this recipe! Restaruant quality for sure. I followed the recipe excactly except that I pounded the chicken breast to an even thickness and it took about 10 additional minutes to cook. Everyone in my family loved it.
