New Potatoes with Caper Sauce

This is a wonderful potatoe dish. I did think there was too much butter for the amount of potatoes and I used extra potatoes for my large family. The next time I make this I will cut back on the butter by at least 1/3 and keep everything else the same.

Fish Tacos Ultimo

I made these twice now and they were wonderful. The first time I used the yogurt as the recipe states and we didn't like it as much as when I used ranch dressing in it's place. I made the dressing from a mix and added quite a few peppers since we like things pretty spicy. I also cooked the fish in a skillet instead of on the grill. With the fresh tomatoes, cabbage, onions and avacado it was really a healthy and great tasting meal!

Everything Cookies I

My daughter made these last night and they were wonderful. She reduced the amount of oil to 2/3 cups as some of the other reviewers suggested to reduce greasiness. Also the recipe doesn't say how long to bake but it took 14-15 minutes. I like my cookies a little crunchy but know that I'm in the minority. The flavor and texture was wonderful and you can easily experiment on different candies to use. She used M&M's. Yum!!

Pico de Gallo Chicken Quesadillas

I pounded the chicken fairly thin before sprinkling it with taco seasoning and then grilling it. I also used a good quality store bought pico de gallo instead of making my own just to save time. I then cut the chicken into strips and added the pico and onion and pepper combo. It was very good but seemed to be lacking a little salt even after the taco seasoning but that's an easy fix. I felt like I was at my favorite Mexican restaurant!

Awesome Slow Cooker Pot Roast

I used a 3 1/2 lb. roast and only one can of soup for this dish. I also salted, peppered and floured the roast and browned it in butter before adding it to the crock pot. Everything else as written. My house smelled so good all day-I couldn't wait for dinner. It tasted really good. A nice deep flavor. I served it with sweet potatoes and roasted brussel sprouts!! Yum!!

Special Chocolate Cake I

This cake was fast and easy to make and tasted great. It had a deep, rich chocolaty flavor. Moist and delicious! I used a buttercream icing to frost it.

Deconstructed Chicken Kiev

Loved this recipe! Restaruant quality for sure. I followed the recipe excactly except that I pounded the chicken breast to an even thickness and it took about 10 additional minutes to cook. Everyone in my family loved it.

Classic Peanut Butter Cookies

These were so good! I added 1 tsp. of vanilla and an additional 1/2 cup of peanut butter. I forgot to chill the dough but they turned out very good anyway. It was probably just a little harder to roll into balls. I also dipped my fork in sugar before I flattened each cookie. I almost ate the whole batch my myself!

Yum! These were so good. I made meatball sandwiches out of them and my husband ate what was leftover plain for lunch the next day. Next time I will double the recipe and freeze the rest.

Iced Pumpkin Cookies

My daughter has made these several times now. They are really good. Soft and cake like. They are a big hit at my house. We leave them out on the counter and they are gone in less than 24 hours!! Yum!

Chicken Tetrazzini IV

Very tasty! I sauteed a package of fresh mushrooms, 2 cloves of garlic and a chopped red bell pepper in a pat of butter. Then I substituted the heavy cream with one half heavy cream and one half fat free half and half. Then I mixed everything together. The fresh mushrooms were wonderful. I can't even stand the smell of mushrooms in a jar and the bell pepper gave it some color. I also added a pinch of red pepper flakes for some zing. I will make this again!!

Super Seven Spinach Salad

There is something about the way these ingredients mingle that I love! I decided to whip up ranch dressing instead of the poppy seed and I'm glad I did! It perfectly complimented the sweetness of the apple and cranberry. I served this salad with spicey salmon and rolls. It was easy and had a pretty presentation but the best part was the taste. Out of this world!

Chicken with Mustard Sauce

I made this for dinner last night and it was very good. I used white wine instead of vermouth and used garlic and a chopped red bell pepper in addition to the shallot. I stirred in fresh baby spinach right at the end just until wilted and served it over egg noodles. The next time I make this I will pound the chicken very thin and brown it before I slice it. I just think I will enjoy the texture more. It was a very tasty dish with a lot of flavor.

Cheesy Ham and Hash Brown Casserole

I love casseroles and this is one of the best!! I used shredded Velveeta cheese instead of cheddar (it has fewer calories), only 1 cup of the parmesan on top and that was plenty and double the ham. We love our meat! I served it with steamed brocolli. Putting everything together was so fast and easy and you could easily add some veggies to the casserole. I would just saute them first. The whole family loved it. Great comfort food.

Good for You Greek Salad

I made this pretty much as written except I used grape tomatoes and I forgot to add the salt and pepper to the dressing. Didn't even miss it though! The salad got a lot of flavor from the cheese and olives. It was delish!

Banana Crumb Muffins

These muffins were outstanding. I made them as directed except I used 4 bananas to make sure they were as moist as could be. My family loved them! My daughter especially liked the crumb topping and my house smelled unbelievably good!

Pork Tenderloin alla Napoli

I made this for dinner this evening and loved it! I substituted chicken broth for the wine but left everything else the same. The cook time was spot on and I served it over pasta. Tasted like something on a restaurant menu!
