Chicken Chimi in the Oven

This is one of the rare recipes that I make over and over again. It's really that good. I have made it with the onion and garlic and sometimes I just rely on the onion and garlic that's in the salsa that I use. I always add the amount of spices called for too. I usually add a little shredded cheddar on top of the refried beans and have never found that I need to secure the tortillas with a toothpick. If we ever have leftovers they never go to waste!

Caroline's Chocolate Fudge Frosting

While I have a lot to learn about cake decorating I can certainly slather on frosting and shake on sprinkles. As other reviewers suggested I used 4 oz. of chocolate and 1/2 cup of milk in this frosting. It was perfect paired with David's Yellow Cake from this site. Yummy!!!

Lo Mein Noodles

Beat and Bake Orange Cake

I made these into cupcakes. I used a little more orange zest (about 1 tbsp.). They had a really nice orange flavor but were a little dry. I will make a cake with the recipe next time to see if that takes care of the dryness. The frosting was REALLY good.

Awesome Slow Cooker Pot Roast

I used a 3 1/2 lb. roast and only one can of soup for this dish. I also salted, peppered and floured the roast and browned it in butter before adding it to the crock pot. Everything else as written. My house smelled so good all day-I couldn't wait for dinner. It tasted really good. A nice deep flavor. I served it with sweet potatoes and roasted brussel sprouts!! Yum!!

Deconstructed Chicken Kiev

Loved this recipe! Restaruant quality for sure. I followed the recipe excactly except that I pounded the chicken breast to an even thickness and it took about 10 additional minutes to cook. Everyone in my family loved it.

Fish Tacos Ultimo

I made these twice now and they were wonderful. The first time I used the yogurt as the recipe states and we didn't like it as much as when I used ranch dressing in it's place. I made the dressing from a mix and added quite a few peppers since we like things pretty spicy. I also cooked the fish in a skillet instead of on the grill. With the fresh tomatoes, cabbage, onions and avacado it was really a healthy and great tasting meal!

Chicken Tetrazzini IV

Very tasty! I sauteed a package of fresh mushrooms, 2 cloves of garlic and a chopped red bell pepper in a pat of butter. Then I substituted the heavy cream with one half heavy cream and one half fat free half and half. Then I mixed everything together. The fresh mushrooms were wonderful. I can't even stand the smell of mushrooms in a jar and the bell pepper gave it some color. I also added a pinch of red pepper flakes for some zing. I will make this again!!

Lemon Fiesta Cake

I made this as directed the first time. It was wonderful. I especially liked the lemon topping. I ate almost all of it by myself! The second time I made it into cupcakes and doubled the lemon zest and used a lemon icing. It was really good too.

Chicken Pesto a la Lisa

This was very tasty. Lots of flavor! I cooked the chicken breasts whole in a pan in olive oil and then cut the chicken up in small pieces before mixing it in with the pasta and sauce. It made a lot. There were four of us eating and we have a lot of leftovers for lunch tomorrow.

Mmmm, this cake was so good. I made it exactly as directed except I used a different frosting only because I had some leftover from another cake. The next time I make this I will add one more cup of apples because more is better right?!

Everything Cookies I

My daughter made these last night and they were wonderful. She reduced the amount of oil to 2/3 cups as some of the other reviewers suggested to reduce greasiness. Also the recipe doesn't say how long to bake but it took 14-15 minutes. I like my cookies a little crunchy but know that I'm in the minority. The flavor and texture was wonderful and you can easily experiment on different candies to use. She used M&M's. Yum!!

Pico de Gallo Chicken Quesadillas

I pounded the chicken fairly thin before sprinkling it with taco seasoning and then grilling it. I also used a good quality store bought pico de gallo instead of making my own just to save time. I then cut the chicken into strips and added the pico and onion and pepper combo. It was very good but seemed to be lacking a little salt even after the taco seasoning but that's an easy fix. I felt like I was at my favorite Mexican restaurant!

Cheesy Ham and Hash Brown Casserole

I love casseroles and this is one of the best!! I used shredded Velveeta cheese instead of cheddar (it has fewer calories), only 1 cup of the parmesan on top and that was plenty and double the ham. We love our meat! I served it with steamed brocolli. Putting everything together was so fast and easy and you could easily add some veggies to the casserole. I would just saute them first. The whole family loved it. Great comfort food.

Belle's Hamburger Buns

I had a lot of fun making these and was very excited to use them for my chicken sandwiches. They were beautiful to look at but a little too hard and chewy for my taste. I might try to make them again and do as another reviewer suggested and brush them with milk instead of the egg yolk to see if that makes them softer.

Spicy Salmon with Caramelized Onions

I made this for dinner tonight and it was a big hit with everyone! I made it exactly as directed except I tripled everything for my large family. I also made it with talapia and salmon since my daughter doesn't like salmon. I had a complete healthy meal on the table in no time flat! The coating on the fish turned out perfectly crunchy and it had that wonderful savory/sweet thing going on that I love! I served it with fresh sautéed spinach and corn on the cob. Mmmmm!

Authentic Enchiladas Verdes

Wow! This was good! I used a rotisserie chicken instead of cooking my own and did not cook the tortillas in oil before dipping them in the sauce since I didn't want the extra calories. Since the recipe didn't say to remove the seeds and ribs from the peppers I cooked them whole but only ended up using one in the sauce and it was plenty hot. My lips were burning! So good. I can't wait to make them again for my oldest son! This recipe is a keeper!
