Super-Simple, Super-Spicy Mongolian Beef

This is a wonderful recipe that I make often. I prepare everything about 6 hours before cooking and let it marinate. I also add broccoli, water chestnuts and a little extra garlic. I cook the broccoli in a hot wok with a little peanut oil just until bright green. I remove the broccoli and put it in a bowl off to the side. Then I cook the meat with the marinade until well done. It seems to tenderize the meat better. I add the broccoli back to the wok after the meat is done and then toss in some sliced water chestnuts and the green onion right at the end. Then just heat through and serve over rice. The veggies will be crisp and the meat is so tender. My family loves this recipe!

Asian Fire Meat

Loved this dish!! I used flank steak and 2 tbsp. of red pepper flakes since we like our food on fire! Other than that I followed the recipe exactly. It was delish and I will make again.

Chicken with Prosciutto Spinach Cream Sauce

Holy cow this was good! Restaurant quality for sure! The only thing different I did was pound the chicken to about 1/2 inch thick and added 5 cups of spinach. I wanted to pour the sauce in a glass and drink it! Yummy!

Catherine's Spicy Chicken Soup

I made this soup two nights ago and it was wonderful. We are eating leftovers and they are just as good if not better than the first time. The only thing I did different was omit the corn and instead of mixing in the sour cream those that wanted it just put a dollop in their bowl along with shredded cheese and avocado. Yum!

7-Layer Meatless Tortilla Pie

I love this dish. I don't mash the pinto beans. I just leave them whole and I use a lot more cilantro, probably more like 2 cups. The fresh cilantro and tomato make it taste really fresh! Serve with sour cream and you have a nice meal.

Garlic Chicken

I made this for dinner tonight. It was easy and I will definitely make it again but I will only rate is as average. I only give 5 stars to knock my socks off flavor. Next time I will add a little salt and butter and saute it in a skillet on the cooktop instead of baking it in the oven.

Baked Ziti I

I really loved this dish. The only thing I did different was I added the sour cream to the beef mixture to hide it from my son who claims he does not like sour cream. He had as least 3 servings over a couple of days and told his dad "mom made a really good pasta dish." Ha, tricked again!! I loved that it made a lot so we had plenty of leftovers for lunch the next day. I will make it often.

Spaghetti Carbonara II

This was very good. Full of flavor and easy to make. I used low carb pasta to cut back on the carbs and no one could tell the difference. Especially nice since my 19 year old daughter won't eat beef or sausage and I'm always looking for recipes the whole family will like.

Award Winning Soft Chocolate Chip Cookies

Very good. My family thought these were better than any other chocolate chip cookies I have made. The recipe made a lot. I froze about half in a zip log bag and they were just as good as fresh after being thawed.
