Fried Apple Pies
Excellent! I used butter instead of shortening, and left off the powdered sugar. These were definitely a hit!

Pumpkin Muffins II
This recipes rocks! Of course, I had to change it a bit ... I used a large can of pumpkin, which was the 2 called-for cups. And I cut all the spices down to just 1 tsp of cinnamon and 1 tsp of nutmeg since strong flavors tend to overwhelm me. The muffins turned out excellent - light, moist, not too sweet, not too spicy. A big hit w/all the family!

Buttermilk Pancakes II
This recipe rocks! I added a little extra milk to get the batter thinned to my liking, and added vanilla & cinammon because I always do in pancakes. Also, I used raw sugar. This was a big, big hit at our kid's sleepover Sunday morning breakfast! Even the picky eaters came back for more. Made about 1,000 3" pancakes. OK, more like about 30 ...
