Mexican Rice

This recipe is awesome although I did make it with Chicken instead of beef. I used a rotisserie chicken and chicken broth. I also added a can of black beans and served with tortillas and sliced avocado. Everyone raved about them The next day I made chicken nachos with the little I had left over. I used tostito's queso cheese, black bean garlic chips, and topped the chicken mixture with sour cream, lettuce, and tomato. The best chicken nachos I've ever had.

Scalloped Potatoes and Onions

This is very good but I did alter how I made it. I diced the potatoes and boiled them in salt water with the onions. I then drained the water and made the sauce in a separate pan. I also used chopped up leftover ham which I added to the potato and onion mixture. Then I poured the sauce over the top and baked at 400 for 40 minutes. Everyone raved about and this has become my new scalloped potato and ham recipe. Thanks for sharing!

Basil Tomato Soup

This soup is awesome! I did also tweak things a bit. Like others suggested I sauteed 1 large garlic clove in the butter and used my hand held blender to make a smooth soup. Also to make sure that the soup doesn't curdle I added about a 1/2 tsp of baking soda. It doesn't change the taste of the soup but if you add cold milk to hot tomatoes it may curdle. That was the only change I made other then adding some salt and pepper. You can't go wrong with this very easy recipe.

White Chocolate Cheesecake with White Chocolate Brandy Sauce

This cheesecake is restaurant quality! I did make a chocolate graham cracker crust by chopping up one package of chocolate graham crackers and melting 7 Tbls of butter. Mix the 2 together and form it in the bottom of your spring form pan. Bake at 350 for 8-10 minutes. I didn't make the brand sauce because we like fresh fruit on ours. I just placed 3 raspberries on each piece. You won't be disappointed with this recipe.

Butternut Squash Soup

This soup is absolutely delicious! I used butter instead of margarine, and chicken broth instead of water. I also roasted red pepper and garlic, and put all the ingredients into the blender. This is definitely one of my favorites and what you would expect from a fine restaurant. Thanks for the great recipe!

Chocolate Trifle

This was an excellent recipe! I too whipped 1/2 pint of whipping cream with 3 Tblsp of sugar and 1 tsp of vanilla. I then added this to the sweetened condensed/pudding mixture. I also spooned caramel sauce over the brownies, added chocolate chunks and heath bar. This was rich but delicious! Thanks for sharing.

Chicken Pasta Salad with Cashews and Dried Cranberries

This salad is delicious! I did use poppyseed dressing instead of the mayo, miracle whip and coleslaw mixture. Also, I left out the cranberries. I will be making this again. Thanks for sharing.

Nacho Dip I

Gary's Stuffed Mushrooms

These are fantastic. After reading the other reviews, I sauteed mushroom stems, 1/2 cup onion, butter (1 stick) and then added the cream cheese and crab. I used real crab instead of imitation. I also sprinkledsome parmesan cheese on top. There was a lot of stuffing left over. This is a very easy delicious appetizer. Thanks for the great recipe.

Best Ever Hot Artichoke Dip

This was great dip, but I did make a few adjustments. I added roasted red peppers, roasted garlic, salt, pepper, and about 1/4 cup of cream. Oh, I also added a few drops of tabasco to give it a bit of a kick. It was gone in no time. Thanks for the great recipe!

Dill Pickles

I have made these pickles several times now, and had already written a review in the past. I have adjusted the recipe a bit and wanted to share my results. I have added a dried red pepper, chopped garlic, 1 tsp of Alum in each jar and about 1 TBSP of peppercorns. I do have to say that this really added a lot. It gives a little kick but is not too overpowering. Excellent pickles!

Chantal's New York Cheesecake

I too expected big things from this cheesecake. Everyone said it was good, but mine didn't look anything like the picture. Maybe I over mixed it or something, but it was dark on top and tasted just average to me. It also had a large crack down the middle and I followed the recipie exactly as written. It did taste good, but I probably won't try it again.
