Cabbage-Carrot Casserole

Made recipe exactly as written except used vegetable bouillon cubes. My husband and I really enjoyed this. I will make again, but will most likely double it to freeze for lunches.

Nutty Coconut Fish

ok, so I made this for the first time. My fish was a bit on the wet side, so make sure you dry them off. I think that was part of my problem. I don't think 375 for my oven was hot enough, so I put it up to 400 after a bit as it was not cooking well. I flipped the fish over loosing most of the coating which was my fault, but I like to cook both sides. I will make sure my pan has more oil next time too. Despite my frustration and mess it still tasted great. My husband raved about it, and wants it often. Thanks for recipe!

Brussels Sprouts with Mushrooms

Wow! I was looking for a way to get myself to eat these. It was one of those "Eat your vegetables," when growing up, so I would see them on the produce isle and speed past. This recipe was amazing! It tasted nothing like the terrible vegetable I remembered. Thanks for the great recipe!

Garlic Mashed Potatoes with Roasted Garlic Cheddar and Bacon

I had this recipe in my shopping list for some time, but could not locate the specialty cheese. This is what I did because I was determined to make this, and try to be fair in my rating. I used golden potatoes because they are my husband's favorite. Skipped bacon because I can't have it, but I am sure it would take it over the top. I did everything else the same except I used a quality plane flavored sharp cheddar cheese and for the salt I used garlic salt. I hate the mess of making mash potatoes, but it is so rewarding in the end. I am freezing half of the uncooked potatoes in small containers for several meals as it is just my husband and I. Enjoy!

Grilled Brussels Sprouts

Followed recipe to the T, except we use a charcoal grill which is not quite as hot as gas, so it took a bit longer for me to cook these. They were still a bit firm for my tastes, but hubby really liked them. The flavor was great, but cooking times will vary depend on what type of grill you are cooking on. We used fresh veggies, so not sure if this might be a factor in the outcome than maybe using frozen brussel sprouts.

Kentucky Biscuits

This recipe is very forgiving. Ok... so I tried to follow the directions, but made one big mistake. I didn't have any buttermilk so made some with one cup milk and tablespoon fresh lemon juice. I made these biscuits for breakfast during the week for my family. As most Mom's know...things are way busy in the weekday. Lunches, diapers, hair needing combed on and on. Well after a major distraction, I came back to whip up the biscuits and poured the entire cup of buttermilk into the mix. When I was trying to get the mix on to the counter it hit me. Wow! This stuff sure is wet. After a few *#@! realizing I had added too much milk I just pressed on and put them in the oven. They didn't turn out like I am sure they are suppose to, but everyone raved! Thanks for a great recipe! Maybe I can get it right next time:)

Hungarian Mushroom Soup

Yum! Made to a T, and we really enjoyed this on a cold snowy day in Ohio. I didn't have fresh Parsley, so used 1 tsp dried. Everything else remained the same, and it turned out beautifully. Served this with some herb italian bread with olive oil, balsamic, and roaster garlic to sop it up with and hubby was singing my praises. We will be making this again just as it is written. No changes needed in my book. Thanks for a great recipe!

Couscous Primavera

Ok so I used all the ingredients to the T, but preparations were done differently. I cooked pearl couscous in sauce pan with broth. Then microwaved and strained the peas. I sauteed onion, jalapeno, and spices in skillet for 3 minutes then added sliced asparagus. Cooked until asparagus was done to our taste at which I tossed in peas and couscous couscous. Mixed it all up in the skillet for a moment, and then served. We tried the mint, but picked it off and added parmesan cheese. I think the flavor would be pretty much the same since I used all the ingredients except the mint. Mint was just weird for us. Will make this again just the way I did. We really liked the flavor.

Key Lime Pie VII

I didn't change a thing. I made this for a church gathering, and an old man said Key Lime pie hu? He got a large piece, found a seat, and set about the task before him. Some time later he came up to me and told me that he is always skeptical when someone says they brought a Key Lime pie. He proceeded to tell me he was indeed an expert at Key Lime as it was his very favorite. He said well.... you indeed brought a Key Lime pie with you, and it is one of the very best I have eaten. I hope you bring that again some time. So, take it for what it's worth. He was no spring chicken, and claims he has spent years eatin pies which folks were claiming to be Key Lime. Some are, and some ain't, but this one past his test! Enjoy! He did:)

Grilled Shrimp Scampi

Followed recipe to a T. My husband and I really enjoyed this recipe. I just laid the shrimp on the grill didn't have the sticks to use, so placed it on some tin foil. We really enjoyed it, and I will be making this again.

Greek Couscous

YUM! I have been looking for this recipe for a while. I had this salad at a bridal shower, and I have been trying to find it ever since. I used vegetable broth in place of chicken broth. I opened two cans of chickpeas by accident, so I will have to make this again tomorrow to use them up. I will be making this when I have group functions, so I have a vegetarian option. So delicious! Thanks for sharing this recipe:)

Grilled Vegetables with Balsamic Vinegar

I mixed up the marinade, and placed it in a ziplock bag. I needed to clean my fridge out before vacation, so I used green bell pepper, red bell pepper, purple onion, and a head of cauliflower. I rinsed them cut them into large pieces and placed them in the bag. I rotated the bag several times to make sure the marinade soaked into all the vegetables. This recipe caused a bit of a fire on the grill from the oil, so make sure you drain off the marinade well before putting veggies on the grill. The vegetables were amazing, and we can't wait to try this recipe again with a variety of vegetables. We don't like egg plant, so probably will never make it, but we will be using this recipe again with vegetables that suit our taste.

Bellepepper's Orzo and Wild Rice Salad

This was a great salad. I hate cooking orzo, so maybe I will try something else next time. I didn't have any white pepper or currants, so used dried cranberries and just went without the white pepper. It was not missed.

Robin's Quinoa with Mushrooms and Spinach

OK, so I didn't have quite the right ingredients for this recipe. I didn't have fresh mushrooms, so I used a large can of mushrooms and skipped the mushroom step all together an dumped them in with the spinach at the end. My goat cheese would not crumble, so we just treated it like cream cheese and worked it in at the end too. Even with all of my troubles trying to get it right it was great!!! My husband kept saying wow! this is so good. I noticed some said the white wine was overpowering, so maybe not using them in the mushrooms was a good idea. Oh! Didn't have fresh Thyme either, so used a tsp of dry. Hey! It was so good despite the lack of this or that.

Raspberry Chipotle Sauce

I made this to accompany Jimmy Dean Sausage Cheese Balls from this site. I took it to a church gathering and people were raving about this sauce. I did as others had suggested and used the chipotle peppers in place of jalepeno peppers. I did everything else just as the recipe says. I can't wait to try this on salmon. My husband used it on left over chicken tonight just because there was some left over. I will be using this for several things in the future. Thanks for the wonderful recipe.

Spicy Shrimp and Grits

i cooked this exactly, but used vegetable broth in place of chicken because it was what I had. Everything else was made to the T. We really enjoyed this a lot. By the way, my grits box said 4 cups of water to 1 cup of grits. I drained the tomato and green chili's. It was plenty thick for us.
