Spicy Tuna Fish Cakes

I usually try to stick to recipe, but didn't have a potato, so I used instant mashed potatoes like someone else did. I used 1/4 of a cup. I didn't have an onion either, so I used 1 tablespoon mince onion. Everything else I followed with recipe, and we loved these. I made them a second time still had to use instant mashed potatoes because I didn't have potato. I did use fresh onion, but we liked the minced better. Tonight!! I am using a fresh potato:) So happy I finally have one to try. We just love this recipe, so I know the fresh real potato will make it even better. Enjoy! And try the minced onion because it is a time saver, and we like it better too.

Sweet Potato and Black Bean Chili

This recipe was quite time consuming, but well worth the effort in the end. Could not find the chipotle pepper spice, so I simple used 2 tablespoons of the sauce from a can of Chipotles in adobo sauce. Did mostly everything by the book except I use agave in place of sugar, so substituted that. I think this might be one of those things that is better the next day. It was delicious for dinner, but suspect after everything has time to marry it could be even better. I did forget the cilantro:( Oh! Well didn't miss it anyway. Thanks for the recipe this is a keeper!

Cabbage-Carrot Casserole

Made recipe exactly as written except used vegetable bouillon cubes. My husband and I really enjoyed this. I will make again, but will most likely double it to freeze for lunches.

Honey-Mustard Macaroni Salad

This was a big hit at our Father's Day get together. I had never made macaroni salad before, but it turned out great. Made it just a few hours before, so it tasted very fresh. I think if I had to make it in advance I would not put the noodles in the mix until just before taking it to the event. The noodles start sucking up the moisture in the salad right away. I hate bloated noodles, so I will make sure I remember that in the future. Had several comments by macaroni salad lovers that it was the best they have had. It is not my taste if food, but it was requested by the hostess, and was received well by all who ate it.

Butternut Squash Bisque

Didn't change much in this. I always have squash roasted and frozen from fall harvesting, so I simple use what I have stored in the deep freeze. It makes making this so lightening fast. I use vegetable Better Than Bouillon for the broth. It has such a nice flavor in soups. I do use 1/2 and 1/2 to save a few calories:) We really enjoy this soup, and don't find it bland at all. I even forget the nutmeg all the time. Oh! well never missed.

Mediterranean Quinoa Salad

My husband and I both enjoyed this recipe, but agreed that it could use way less onion. Red onion is quite powerful. I even doubled the recipe and used only one onion. I am not sure we could have eaten it if I had only made one batch. I will be cutting the onion back to 1/2 red onion next time. It was very delicious despite the overpowering onion taste.

Strawberry and Feta Salad

Enjoyed the salad. Followed recipe to the T. I think there was way too much oil. I would cut it back to half next time. I think a few cranberries might make this a home run for us.

Cranberry Orange Loaf

I made this recipe to the T except for the nuts. Had to leave them out. Everything else was followed exactly. These were just amazing by themselves. I had one right out of the oven. So yummy. Later, I decided to add some glaze after they cooled off. I started with 1 cup powdered sugar, 1/2 tsp vanilla, and slowly added enough orange juice to get a thick glaze. It just added a little something extra to the muffin. PLEASE DO NOT BEAT MUFFIN BATTER AS IT WILL MAKE A TOUGH MUFFIN. Gently stir just until combined.

Spicy Shrimp and Grits

i cooked this exactly, but used vegetable broth in place of chicken because it was what I had. Everything else was made to the T. We really enjoyed this a lot. By the way, my grits box said 4 cups of water to 1 cup of grits. I drained the tomato and green chili's. It was plenty thick for us.

Cucumber Sandwiches III

Made this to the T. I made two separate batches. One with Italian and one with ranch. The ones with ranch went before the ones with Italian, so I know how I will make these again in the future. People really ate them up too! I used just small loaves of french bread, and it held up really well. I assembled them about 2 hours before the party, and they were not soggy at all. I wonder how far out they could be prepared and hold up? I will play with it a bit to see. I will try fresh dill in the summer time as it is so pretty.

German Apple Cake I

I made two of these cakes to the T. The first one I put in a bundt pan, and when I went to flip it the cake stuck and tore half the top off. I think if you use a bundt you need to cook this way longer. I started over, and made another one a few hours later in the 9 x 13 pan. This cake turned out fine, but as someone else said it does not keep well. This is an eat right away dessert. It had deflated quite a bit the next day when I took it to a church fellowship. I made caramel sauce for it, and kept it warm to pour over it. Without the caramel sauce it would have been just ok. This is a right out of the oven cake. I would never make it again if we were not eating it right away, and I would not make it without the carmel sauce for sure.

Brussels Sprouts with Mushrooms

Wow! I was looking for a way to get myself to eat these. It was one of those "Eat your vegetables," when growing up, so I would see them on the produce isle and speed past. This recipe was amazing! It tasted nothing like the terrible vegetable I remembered. Thanks for the great recipe!

Crunchy Romaine Salad

I didn't have any broccoli, so I used small pieces of diced celery. I didn't have romaine, so I used a mixed bag lettuce, and a little baby arugula. I used agave for the sugar, but all other items remained the same. This was an amazing salad. The dressing made a lot, so I will be able to use it for several lunches. Thanks for a great recipe!

Fish Tacos Ultimo

We really enjoyed these. I didn't process the cilantro, yogurt, and adobe sauce in a blender because I am too lazy. I just diced it up, and mixed. I used broccoli slaw in a bag from the store for the cabbage because I was too lazy to chop some cabbage. It took me several weeks to make this because there were a lot of steps in the process, but craving won out over lazy! Yum! In the end, it was not too long of a process to make after all. Thanks Chef! We enjoyed them:) The only thing that would have made them better is if you would have cooked them. LOL

Mona's Easy Refrigerator Pickles

This is my third time to make these today. My sister in law has a garden, and has been supplying me with cucumbers. My Mom used to make these when I was growing up, and they are yummy! First time made just as recipe stated, The second time I cut the sugar back to one cup just to see what would happen. Still great! I am going to try Agave today in place of the sugar to see what we think. 5 star from the start. My husband will not even wait a day to start eating them, so I am not sure what they would taste like when they are really done!

Nutty Coconut Fish

ok, so I made this for the first time. My fish was a bit on the wet side, so make sure you dry them off. I think that was part of my problem. I don't think 375 for my oven was hot enough, so I put it up to 400 after a bit as it was not cooking well. I flipped the fish over loosing most of the coating which was my fault, but I like to cook both sides. I will make sure my pan has more oil next time too. Despite my frustration and mess it still tasted great. My husband raved about it, and wants it often. Thanks for recipe!
