Cabbage-Carrot Casserole

Made recipe exactly as written except used vegetable bouillon cubes. My husband and I really enjoyed this. I will make again, but will most likely double it to freeze for lunches.

Baked Pumpkin, Sweet Potato, and Coconut Milk Soup

I never heard so much complaining in my life. This recipe was so much work, and no one liked it. I am going to try and doctor it up with one of our other favorite squash recipes. It was just not our taste. My husband kept saying, "This stuff just needs something." "Why didn't you make that other squash soup we really love?"

Butterscotch Oatmeal

Just finished trying to eat this oatmeal. I made it exactly as written. I will repeat what others are saying, "Reduce the sugar." I could not finish it due to the level of sweetness. I will try it again reducing the sugar to at least half if not more. All I could taste was sugar:(

Cheesiest Potato Soup

I made this recipe as printed except used only 1/2 cup cream and 1/2 cup 2% milk. I didn't blend it up because hubby doesn't like it. I did add some instant potato flakes at the end to thicken it up a bit. Next time I will use a small amount of olive oil to fry onion, 2% milk for cream, and only 1 cup of cheese. This is way too heavy on calories to have often.

Spicy Vegan Potato Curry

WARNING!!! We cut the pepper back to half, and this was so hot our family could hardly eat it. We ended up putting sour cream on it to get rid of some of the heat. I was crying, my daughter was blowing her nose, and my husband was saying Wow! pass the sour cream. We will make this again with WAY less pepper. We did add a little salt to ours while eating it. Guess we are a little wimpy when it comes to heat:)

Kentucky Biscuits

This recipe is very forgiving. Ok... so I tried to follow the directions, but made one big mistake. I didn't have any buttermilk so made some with one cup milk and tablespoon fresh lemon juice. I made these biscuits for breakfast during the week for my family. As most Mom's know...things are way busy in the weekday. Lunches, diapers, hair needing combed on and on. Well after a major distraction, I came back to whip up the biscuits and poured the entire cup of buttermilk into the mix. When I was trying to get the mix on to the counter it hit me. Wow! This stuff sure is wet. After a few *#@! realizing I had added too much milk I just pressed on and put them in the oven. They didn't turn out like I am sure they are suppose to, but everyone raved! Thanks for a great recipe! Maybe I can get it right next time:)

Strawberry and Feta Salad

Enjoyed the salad. Followed recipe to the T. I think there was way too much oil. I would cut it back to half next time. I think a few cranberries might make this a home run for us.

Robin's Quinoa with Mushrooms and Spinach

OK, so I didn't have quite the right ingredients for this recipe. I didn't have fresh mushrooms, so I used a large can of mushrooms and skipped the mushroom step all together an dumped them in with the spinach at the end. My goat cheese would not crumble, so we just treated it like cream cheese and worked it in at the end too. Even with all of my troubles trying to get it right it was great!!! My husband kept saying wow! this is so good. I noticed some said the white wine was overpowering, so maybe not using them in the mushrooms was a good idea. Oh! Didn't have fresh Thyme either, so used a tsp of dry. Hey! It was so good despite the lack of this or that.

Honey-Mustard Macaroni Salad

This was a big hit at our Father's Day get together. I had never made macaroni salad before, but it turned out great. Made it just a few hours before, so it tasted very fresh. I think if I had to make it in advance I would not put the noodles in the mix until just before taking it to the event. The noodles start sucking up the moisture in the salad right away. I hate bloated noodles, so I will make sure I remember that in the future. Had several comments by macaroni salad lovers that it was the best they have had. It is not my taste if food, but it was requested by the hostess, and was received well by all who ate it.

This recipe was quite time consuming, but well worth the effort in the end. Could not find the chipotle pepper spice, so I simple used 2 tablespoons of the sauce from a can of Chipotles in adobo sauce. Did mostly everything by the book except I use agave in place of sugar, so substituted that. I think this might be one of those things that is better the next day. It was delicious for dinner, but suspect after everything has time to marry it could be even better. I did forget the cilantro:( Oh! Well didn't miss it anyway. Thanks for the recipe this is a keeper!

Mediterranean Quinoa Salad

My husband and I both enjoyed this recipe, but agreed that it could use way less onion. Red onion is quite powerful. I even doubled the recipe and used only one onion. I am not sure we could have eaten it if I had only made one batch. I will be cutting the onion back to 1/2 red onion next time. It was very delicious despite the overpowering onion taste.

Delicious Egg Salad for Sandwiches

Just finished an egg sandwich with this recipe. I have been under the weather, so I just couldn't find anything that sounded good enough to bring me off of my sick bed. This seemed quick with fairly limited effort, so I drug myself into the kitchen for the soul purpose of enjoying a delicious egg sandwich. Ok, so there was no wow! factor for me, but it was tasty. I will make it again in the future with some modifications. I did leave out the salt as I have to watch salt in my diet. Other than that, it was made by the book. I think it needed some dill, or very small amount of sweet relish to give it just the right taste for me.

Butternut Squash Bisque

Didn't change much in this. I always have squash roasted and frozen from fall harvesting, so I simple use what I have stored in the deep freeze. It makes making this so lightening fast. I use vegetable Better Than Bouillon for the broth. It has such a nice flavor in soups. I do use 1/2 and 1/2 to save a few calories:) We really enjoy this soup, and don't find it bland at all. I even forget the nutmeg all the time. Oh! well never missed.

Dad's Leftover Turkey Pot Pie

I have made this with both chicken, turkey, and vegetarian. When making vegetarian I use vegetable broth, and no meat. This is my FAV pot pie recipe.

Greek Couscous

YUM! I have been looking for this recipe for a while. I had this salad at a bridal shower, and I have been trying to find it ever since. I used vegetable broth in place of chicken broth. I opened two cans of chickpeas by accident, so I will have to make this again tomorrow to use them up. I will be making this when I have group functions, so I have a vegetarian option. So delicious! Thanks for sharing this recipe:)

Bellepepper's Orzo and Wild Rice Salad

This was a great salad. I hate cooking orzo, so maybe I will try something else next time. I didn't have any white pepper or currants, so used dried cranberries and just went without the white pepper. It was not missed.

Couscous Primavera

Ok so I used all the ingredients to the T, but preparations were done differently. I cooked pearl couscous in sauce pan with broth. Then microwaved and strained the peas. I sauteed onion, jalapeno, and spices in skillet for 3 minutes then added sliced asparagus. Cooked until asparagus was done to our taste at which I tossed in peas and couscous couscous. Mixed it all up in the skillet for a moment, and then served. We tried the mint, but picked it off and added parmesan cheese. I think the flavor would be pretty much the same since I used all the ingredients except the mint. Mint was just weird for us. Will make this again just the way I did. We really liked the flavor.
