I am eating this as we speak. I did change the serving size as I only cooked for myself, or two people at most in case my boyfriend wanted some. So I cut everything by roughly 1/3. As far as the beans go, for the regular chili beans, I put in all "mild" beans, and then for the spicy ones I put in "medium" ones. Then I added a lot of Frank's Red Hot Sauce, more than the recipe called for. I also guesstimated all the seasonings. I did add some frozen corn kernels, which gave it a nice sweet flavor. I had a block of white cheddar and shredded it myself, also served it with some sweet cornbread and sour cream. Delicious!! My rendition of the recipe has the perfect heat level, and I do love spicy food but sometimes I like to keep it at a comfortable level when I'm about to pig out.
