Homesteader Cornbread

Used melted unsalted butter instead of oil, doubled the salt and borrowed the vigorous stirring from other reviews. Delicious, about to use as a stuffing.

Naan

A delicious recipe. The dough was smooth and lovely to work with. I cooked them over a medium heat in a cast iron pan. Next time I will follow another reviewers suggestion to mix the garlic into the melted butter for a more uniform garlic flavor, but other than that I wouldn't change a thing. We wrapped Shish Tawook (made from this recipe: http://allrecipes.com/recipe/shish-tawook-grilled-chicken/detail.aspx?event8=1&prop24=SR_Title&e11=shish+kabob&e8=Quick+Search&event10=1&e7=Home+Page ) in this bread and devoured it. I can't wait to try this on the grill.

Shish Tawook Grilled Chicken

Wow this was delicious! I was out of peppers, so I used onions, mushroom halves and tomato wedges, and served them with a pile of fresh naan, (I used this recipe and cooked it in cast iron on the stove top. http://allrecipes.com/recipe/naan/detail.aspx?event8=1&prop24=SR_Title&e11=naan&e8=Quick%20Search&event10=1&e7=Home%20Page). Instead of firing up the grill, I cooked them under the broiler for about 5 minutes a side. The spice mix and seasoning were out of this world good, and it all came together pretty easily. Will definitely make this again.

Grandmother's Buttermilk Cornbread

This was perfect cornbread. Nicely sweet and rich, the perfect accompaniment to a bowl of chili. I only had 1/2 cup of buttermilk on hand, so I made up the difference with 2% and added an extra 1/4 teaspoon of baking soda, but the texture was just right. Thanks for a great recipe!

Pasta with Gorgonzola and Sweet Onion

This is delicious! I was short an onion, so I added a little bit of agave nectar to make up the sweetness. I served it over tortellini with a sprinkle of parmesan and a lot of black pepper. Next time I'll try the arugula that was suggested earlier. That sounds lovely.

Garlic Chicken Fragrant Rice On a Budget

This was easy and surprisingly delicious! I made a few changes based on what I had on hand. I used two cups of rice and three cups of chicken stock that I had leftover from a batch of Hainanese chicken rice. I skipped the olive oil but used four chicken thighs. I put in about five minutes of work and then closed the lid and pushed a button. 25 minutes later I fed my family a delicious dinner. Thanks for a great recipe!

Whipped Cream Cheese

I used two 8 oz packages of cream cheese and only two tablespoons of milk. Once it was combined I whipped it on high in my kitchenaid for a minute or so and the results were light, fluffy and delicious. It is very easy to spread and makes a little bit of cream cheese go a long way. Thanks!

Tom and Jerry Batter

This tastes just like the stuff I drank as a kid in northern Wisconsin. Thanks so much for the recipe. I made a rookie mistake and didn't check the number of servings before I started separating eggs. Be aware, this recipe makes about six pints worth of the stuff. I'll be sending guests home with the leftovers. :)

Mahogany Chicken Wings

Delicious wings! I was out of molasses, so I left it out. Also, I added a sprinkle of five spice powder and a drizzle of sesame oil. I started them the day before I needed them and let them marinade overnight so they really soaked up the flavors. I will definitely make these again.

Herbed Chicken Omelet

Fabulous Homemade Bread

So far, I love this recipe. I decided that I should start baking my own bread so that I know what goes into it and I don't have to worry about deciphering labels. I followed the recipe exactly so far, except that I substituted 1/3 cup of melted butter for 1/3 cup of the vegetable oil, and olive oil for the other 1/3 cup. The dough is currently resting in the refridgerator. I will take it out tomorrow to raise it, form it into loaves, rise it again and bake it. I wanted to tack a warning onto this recipe tonight though. If you have a small kitchenaid mixer, split this recipe in half. I just barely managed to pull together an entire batch of this dough in my mixer, but there are bits of dough up in the crank shaft and I am going to have a heck of a time cleaning this out. Even two batches of this quick and easy to throw together bread will be worth the time and effort. Especially with bread running $3.00 a loaf at the store. My poor mixer made an awful burning smell tonight. I am convinced that I will always half this recipe in the future. Hope that this is helpful. I will let you know how the finished product turns out.

These were delicious! I had to lower the heat a little bit on mine, but I was cooking on an ancient electric stove. I added a little cheese and garlic to the mix, and I also added a little butter to the cooking oil. Thanks very much for a great recipe!
