My favorite family cooking traditions
My dad used to make "matzo brye" on weekends. It's a matzo-egg scramble. Dad used to tell a story about "Yussell" the boy who was a picky eater, and consequently never got invited to brunch or dinner parties. I guess this was supposed to make us eat anything my father cooked!

Cheesy Eggplant Casserole
Pretty tasty. I didn't have a whole eggplant so I used half a large eggplant, and a bag of spinach, cooked and mixed with 1 tsp crushed garlic. Be sure to add the raw egg BEFORE adding the warm spinach! Also I precooked the stuffing earlier and let it cool. Instead of cheddar cheese I mixed in 1/2 cup cottage cheese, and topped it with Mozarella. I don't know if this lightened up the fat content much but it tasted good. It made a rich-textured comfort food type casserole. There was none of that tartness often associated with eggplant.

Warm Crab Parmesan Dip
Like many of you I reduced the mayo- to 1/3 cup, and I added an extra 1/2 can of crabmeat. One review I read said this recipe needed a kick. Here's what I added: 1/2 a package of guacamole mix (the powdered kind). My sister and her husband loved it and I did too.

Chicken Tortilla Soup IV
Great recipe. Doesn't take long to cook. I use store-bought tortillas so that makes one less step. I used 1/2 the fresh cilantro, 1/2 the salsa amount the recipe calls for, and more chili powder. Serve garnished with chopped cilantro, plus either grated cheddar cheese or a TBSP of sour cream. Adjust spices accordingly for children.
