Easy Arugula Salad

I am not a fan of arugula but I am with this recipe. I couldn't seem to get enough. I used slivered roasted almonds instead of pine nuts. So deeeelicious!

Toasted Garlic Bread

This was delicious! Everyone liked the garlic bread! I did not use the cheese and it still was delicious! I used Ezekiel bread and a loaf of gluten free bread! I will be making this often!!!

High Protein Peanut Butter Balls

My husband I thought these were delicious. I added a couple dashes of cinnamon as well. I also added a tablespoon of coconut oil and then rolled them in balls and covered with coconut! We gobbled them up! I was only able to save a few for the freezer. I cut the recipe in fourths to see if I liked them. Then my husband tasted them and wanted to have them all. I was able to convince him to save three of them for the freezer. I will have to make full batch next time!

Avocado-Mango Salsa

My hubby and I thought it was delicious! Since I didn't have a red onion I only put a little of chopped onion. Used lime instead of vinegar since I had plenty! I also used stevia powder and only 1 tsp. of sugar. This was delicious!!! Thanks for sharing!

Apple-Cranberry Crisp

I made this with some tart apples, I used less sugar for fruit and topping. Used agave and stevia to cut down on sugar. Did not use pecans or regular flour because of food allergies. Instead I ground gluten free oats to make oat flour. Next time I will use only 1/2 teaspoon of nutmeg. I also leave the apple peels on....we like it that way and it saves time on making it too. It was delicious!

Fresh Asparagus Soup

This was delicious! So easy to make! I subsituted soy milk for lactose free milk. I also added extra vegetable broth to mix in my blender easily. Also added extra lemon.

Chocolate Mint Dessert Brownies

Made this for my grandson's 13th birthday. He loves mint and chocolate. We all loved it! My daughter said that this will replace our favorite chocolate cake recipe. Make sure you double the frosting otherwise you will be sorry! Only make it when you are having company..otherwise it is too tempting to have around:)

Real Hummus

This was delicious!!! I sprinkled a tiny amount of stevia, and hot sauce at the end. I also only used 3 T. of lemon, and half the salt. Thanks so much for sharing!!!
