About this Cook
I grew up in an Italian household were my mother and grandmother did all the cooking. Since it was always availalbe to me I never had to take an interest but I must have learned by osmosis because I turned out to be a great cook. I love to entertain. Having 100 people is nothing for me to handle. In fact when I was going thru Chemo for breast cancer, my son graduated from High school and just 5 days from a treatment prepared his graduation party for over 100 people. We had chicken, pasta, sausage and peppers and desserts. Cooking and entertaining got me thru my illness. My daughter has no interest in cooking at the age of 17. I'm hoping she is like me and learns from just being around me and my mom.

Famous Chicken Francaise
Loved it but I changed it a little. Cut up chicken breast to 1 inch cubes. Put 1/2 cup flour, garlic powder and paprika in zip lock bag. Tossed chicken in bag. Then added to egg and lemon juice. Coat quickly and placed in pan with melted butter and olive oil. Separated and cooked til golden brown. Added minced onions 1 Cup Chicken broth and 1/2 cup lemon juice. Simmered for 10 minutes and placed over rice. Great!!!!

Italian Dressing Mix
Great recipe. I used it for the Chicken Strogenoff recipe because I didn't have any good seasons. Made the recipe as is except I did use 2T of salt and 1T of garlic powder. I never have garlic salt on hand. Great to have on hand. Will try it as a dip as others have suggested!

Slow Cooker Chicken Stroganoff
I'm giving it 5 stars cause the basic recipe is great. I had to change things because I didn't have all the ingredients and it was snowing so I didn't go out. Instead of cream of chicken I had cream of Mushroom( only can on hand) didn't have the Italian seasoning mix so I used the one on Allrecipes and used 2T of it. Didn't add any liquid to the chicken and it browned beautifully with just the butter and seasoning. Added only 1/2 stick of cream cheese (4oz.) because that's all I had and then added 4 oz. sour cream. It came out great. Had no leftovers. Will make it again for sure
