BBQ Pork for Sandwiches

You will love this recipe! I throw my ribs on the grill for about 5 minutes per side for a smoky flavor and then throw in the crockpot. I also use the beer instead of beef broth while cooking. You might want to brush/spray a little olive oil on the ribs before throwing on the grill b/c they are fairly dry. I do once a month cooking, and I have incorporated this recipe into my freezer cooking. I freeze the meat/sauce mixture and reheat portions later! Yum!

Sicilian Pizza

Yum! I added a little bit of sugar to the dough and the sauce. I also spiced the sauce up with 3 garlic cloves, extra EVO, and lemon juice. It would have tasted great just the way the recipe state though. My cheese started getting really brown half way through cooking. I just covered with some tin foil and that stopped the browning.

Seven Layer Taco Dip

Word of Advice: Make this in advance and refrigerate. It is much better the next day when the flavors have a chance to meld. The first day the taco seasoning was overwhelming, then everything rehydrated and blended nicely.

Chicken Quesadillas

Yum! I added a little cumin and halved the recipe. I also only had small tortillia shells, and they worked fine. This might be good with a little jalepeno pepper. I also used fresh bacon cooked and crumbled. Serve with a little yellow or spanish rice, and you've got a meal!

Easy Baklava

Wonderful! I used pecans and added 1/4 teaspoon ground cloves plus whole cloves on top for garnish. I also added 1 cup honey vs. 1/2 cup honey. Make sure you let the syrup cool completely. I made the syrup first, and then did then pastry. Dribble butter on the pastry first vs. trying to brush it all on. I was really happy with the results!

American Lasagna

Becky's Chicken Salad

Wow! This is just so good! I didn't put as much salt because I used a rotisserie chicken...which did great. I also toasted the almonds. You might even be able to cut the mayo just slightly. Overall, just great!

Honey Glazed Ham

Hints: This is the 10th time I've made this ham. I put about a tablespoon of fresh lemon juice in the glaze and ground cloves instead of studding the whole ham. This is just another variation. We have 3 little ones, so they don't like pulling out cloves! Best ham I've ever made. Just wonderful taste. I also put a little ground clove in the glaze for added flavor. Some pointers: Seriously, really line the pan with aluminum foil. I only put a flimsy piece in, and the glaze got underneath, and burned into this immovable glob of gunk. I traded pans halfway through the cooking. The ham was still the best though! I just had to throw out the pan!

Strawberry Cake II

Okay, this frosting just doesn't work! I just couldn't get it to thicken up to any semblance of a normal frosting. I put it on the cake anyway, and it just looked awful. But, the cake has potential. Use a different frosting and keep the cake recipe. If you attempt the frosting, be prepared to use 2 boxes of confectioner's sugar.

Egg and Sausage Casserole

Yummy! I used a pound of cooked crumbled bacon, which worked great! I also omitted the oregano. The casserole baked up almost like "bars" using the bacon...very different! Almost quiche like. The sausage is very tasty too!

Coconut Sour Cream Cake

Wow! This cake was just great. I thought the frosting amount was perfect...nice and fluffy. I also dyed a little of the coconut green and sprinkled it on top for "grass" then hid little jelly beans on top of the green coconut so they looked like little Easter eggs lying in the grass. I also sprinkled green coconut around the bottom and put jelly beans around the bottom. Just fantastic!
