Squash with Tomato and Feta Cheese

Delicious!! Used one full acorn squash, the entire green pepper, tossed in some extra green onions and probably too much cheese. Used herbed stuffing. I can't wait to make this as a holiday side dish! Next time I will find a way to substitute the heavy cream :)

Swiss Chard with Garbanzo Beans and Fresh Tomatoes

Took another's advice and added couple shakes of red pepper flakes and about 1/2 tsp of cayenne. I also added sweet yellow bell pepper. Delicious. I love it super hot, so I covered it all with siracha. LOVED the sweet/hot. Will definitely eat this again!

Couscous with Olives and Sun-Dried Tomato

Made this dish and EVERYONE raved. Followed the previous comment and made the cous cous last. Used regular cous cous because that's all I could find. Turned out great. Maybe feta or felafels would be a great protein addition. However, I eat it as my main dish as is!

Curried Carrot Soup

LOVED this. This will be a staple. I upped the spices: one tbs ground ginger, 1 tbs Gram Marsala, and about 1 1/2 tbs of curry. But I love a kick! It soothed my sore threat in a second. I stuck with the four cups of veggie broth because I love thick purees.. Thanks for this EASY, light, lovely rendition. It's my new favorite! Better than Moosewood's!

Vegetarian Bibimbap

LOVE this recipe! I have tried to recreate bibimpop, which is next to impossible in the States. This was FANTASTIC! I began the recipe by frying some tofu in the oil (wok.... 1 inch width slices. Key is to not touch the slices for 7 minutes until you flip!) as my rice was cooking (in the rice cooker). Then, I followed the recipe as written, but threw in some thawed freezer veggies as well (broccoli and spinach) with the shoots, sprouts, and shrooms. I mixed the rice, soy sauce, and onions in a separate bowl, and we each served our own since I will kill people with gochu chung or siracha. I give this 10 stars. I have been searching for a good bibimpop recipe, and this reminded me of Korea as much as the ingredients could allow!!! Loved the addition of the mushrooms. I will make this over and over. THANK YOU! Perfect!
