Soft Molasses Cookies II

These were so soft and tasty! I doubled the cinnamon and ginger because I like a heavier spice flavour in my cookies, and I added some nutmeg as well. They came out perfectly in 11 minutes. Yesterday I made another batch, but with honey instead of molasses and just the recommended amount of spice. Those were really good too. I'm definitely keeping this recipe.

Cream Cheese Pound Cake I

This pound cake was excellent. Nice and dense, and SO rich and filling! I didn't count my eggs before I started, so I used 5 eggs and maybe 1/4c sour cream to make up for the moisture. Mine cracked a bit, but that certainly doesn't affect the taste. I might add some lemon extract next time and see what happens - I'm so excited to have a good recipe like this that I can use to experiment.

Easiest Ever Fruit Cobbler

This turned out looking horrible, but it gets two stars for tasting good anyway and another one because it was probably my fault (or my old, derelict oven's fault) that it turned out so badly. I didn't have any self-rising flour, so I used flour and a bit of baking powder. I also used 1% milk as it was the only type we had. It seemed as though there was far too much juice with the peaches, and the topping mixture floated unappealingly on the top before I put it in the oven. The topping was only browned in some areas; the rest remained an off-white colour that looked uncooked even though it was not. All in all, it looked rather awful but, as I mentioned, it still tasted good... it's just nothing I would serve to guests.

Cheesecake Supreme

This would have been 5 stars, but I had to follow the suggestions in the reviews in order for it to turn out properly. Since I only had one cup of graham cracker crumbs, I substituted the other half cup with finely crushed Arrowroot biscuits. I added 2 tsp of vanilla to the batter as suggested, and baked for 3 hours 10 minutes at 200 degrees. I then let it cool in the oven for a while before sprinkling the top with chocolate flakes and relocating it to the refridgerator. I let it cool in the fridge for about 36 hours before giving it to my boyfriend as a birthday cake and it tasted fantastic. It was still less solid than I would have liked in the middle, though. I might experiment with this recipe in the future.

Deep Dish Brownies

These were excellent, although not quite what I expected. The edges are rather crunchy, but the centre and bottom are wonderfully moist and chewy. I had them in the oven for about 40 minutes. I'd make them again, but not before trying a few other recipes.

Creamy Caramel Flan

I've never made or eaten flan before, so my opinions may not be as unbiased as others, but I thought that this was marvellous. I was initially worried about how quickly the caramel hardened on the bottom of the baking dish, but it ended up coming out just fine. A perfect halfway point between custard and cheesecake.

Buttermilk Cinnamon Rolls

These were excellent sticky rolls, but I wouldn't call them cinnamon rolls. I doubled the recommended amount of cinnamon, and the rolls still didn't taste cinnamon-y. That didn't keep them from being a huge success, though! They were large and had a nice texture. I suggest placing a sheet of parchment paper between the rolls and the pan to keep the filling from burning when it oozes out.

Beth's Chocolate Chip Cookies

These are the best chocolate chip cookies I've ever made, and I make a lot of cookies. ;) My boyfriend is absolutely addicted! So am I, come to think of it. I'd definitely recommend this recipe to my friends.

Rachael's Chicken

I took navy_mommy's idea and added some lemon juice to the chicken, as well as serving it with a slice for appearance. The lemon went very nicely with the thyme and with the sprinkling of rosemary I added. I served this with a side of rice, and my boyfriend loved it. :) I'll probably make this again.
