Good for You Greek Salad

Killer salad! I only had ingredients for the dressing, tomatoes, feta, and onion but it was still AWESOME. I was very impressed with how this was an exact match for my favorite Greek salad in St. Louis. Next time, I'll plan ahead and be sure to include everything!

Cranberry Orange Bread

Absolutely the best cranberry orange bread I have ever had. I've made more than one batch now, and they are consistently excellent. Here are the substitutions I made: used (1) whole orange sent through food processor instead of canned mandarin, used orange juice instead of milk, and used twice the vanilla and zero orange extract. FYI, use fresh or frozen cranberries. PERFECT.

Fruity Curry Chicken Salad

We used this recipe for a women's conference and it was fantastic! The portions are correct, too -- so just enter # of people and go. Best chicken salad I've ever had. Lots of compliments on it!

Excellent! I think the use of both butter and Crisco sets this recipe apart. It was perfectly chewy with a slightly crunchy crust. Couldn't have been better.

Chipotle Macaroni and Cheese

I made this for a big family Christmas. I added a bit more chipotle peppers since I knew I wouldn't be using the rest of the can before it spoiled. It was AWESOME! So many compliments! This is an adult-oriented mac & cheese.

Cranberry, Sausage and Apple Stuffing

I took a chance and cooked this in a Crock Pot, because I didn't have any more oven space available. It was fantastic! I set it at Low for 4 hours. The recipe was followed exactly otherwise.

Low-Fat Blueberry Bran Muffins

I didn't have any dried blueberries on hand, so I used raisins. Awesome! Next time I am at the store I'll be sure to buy dried blueberries, because that may be even better.

Tiramisu Layer Cake

Awesome! I doubled the coffee powder, coffee, and liqueur and mixed it into the entire batter. Everything else I kept the same. Since I had only 2 rounds, that made both rounds coffee flavored. Everything else was kept the same as instructions. My mom said it was so good she was bringing it the big family Christmas party!

Pork Balls and Sauerkraut

Our family loved this! We did nothing different from the recipe. FYI... be ready to take it off after cooking for 1 hr. You probably won't need that extra 30 minutes, otherwise your pork will be tough. Keep in mind that ground pork is VERY LEAN. Therefore, it cooks up firm. If you want fattier meatballs that are softer when finished, you can mix in some beef, which would be yummy, too. Or you could use pork sausage, which has lots of fat to make it chewier. We loved ours with the plain ground pork.

Chicken Enchilada Soup III

Doubled the recipe, used 1 whole freshly roasted chicken, added 2 cans black beans with liquid, 1 can green enchilada sauce, 2-3 oz. chipotle pepper salsa, 4 oz chopped green chilis, omitted 1 cup water. Topped with cheese, pico de gallo, and sour cream. Better than the restaurant!!
