Chipotle Macaroni and Cheese

I made this for a big family Christmas. I added a bit more chipotle peppers since I knew I wouldn't be using the rest of the can before it spoiled. It was AWESOME! So many compliments! This is an adult-oriented mac & cheese.

Cranberry, Sausage and Apple Stuffing

I took a chance and cooked this in a Crock Pot, because I didn't have any more oven space available. It was fantastic! I set it at Low for 4 hours. The recipe was followed exactly otherwise.

Low-Fat Blueberry Bran Muffins

I didn't have any dried blueberries on hand, so I used raisins. Awesome! Next time I am at the store I'll be sure to buy dried blueberries, because that may be even better.

Authentic Enchiladas Verdes

Tiramisu Layer Cake

Awesome! I doubled the coffee powder, coffee, and liqueur and mixed it into the entire batter. Everything else I kept the same. Since I had only 2 rounds, that made both rounds coffee flavored. Everything else was kept the same as instructions. My mom said it was so good she was bringing it the big family Christmas party!

Pork Balls and Sauerkraut

Our family loved this! We did nothing different from the recipe. FYI... be ready to take it off after cooking for 1 hr. You probably won't need that extra 30 minutes, otherwise your pork will be tough. Keep in mind that ground pork is VERY LEAN. Therefore, it cooks up firm. If you want fattier meatballs that are softer when finished, you can mix in some beef, which would be yummy, too. Or you could use pork sausage, which has lots of fat to make it chewier. We loved ours with the plain ground pork.

Chicken Enchilada Soup III

Doubled the recipe, used 1 whole freshly roasted chicken, added 2 cans black beans with liquid, 1 can green enchilada sauce, 2-3 oz. chipotle pepper salsa, 4 oz chopped green chilis, omitted 1 cup water. Topped with cheese, pico de gallo, and sour cream. Better than the restaurant!!

Pasta Lasagna

Excellent! I added garlic salt, garlic powder, and Italian seasoning to the ricotta mixture just to spice it up a bit, and then chopped some fresh tomatoes and tossed them into the sauce mixture. This was a pretty, tasty dish that reminded me a lot of an all-out lasagna, but with less work.

Fruit Pizza II

Wow! Tip -- don't skip the sauce. The sauce takes this from good to awesome. I will lower the amount of Cool Whip next time to really bring out the cream cheese flavor. That part kind of got lost in all the Cool Whip. I recommend tasting this as you go so you can stop when you reach the consistency & flavor that you want.

Banana Pudding IV

Next time I will choose the basic version of Jello pudding mix. I won't be spending the block of cream cheese and container of sweetened condensed milk on this again. It was way to light and fluffy, didn't have a good vanilla pudding flavor (too mellowed out by the cream cheese, SCM, and Cool Whip). Very fluffy. Not worth the calories!

Excellent! Tips: open up the first several to make sure you are cooking them long enough all the way through. Under-done will give you dough in the middle, and overdone will have too dark a color and a slightly burnt taste. There is a happy medium. To reach it, you need to drop in a middle-sized piece (not too big to cook through) and watch the color. If it goes dark before it cooks through, reduce the size of malasada and/or lower the temp. Overall, easy to make.
