White Chocolate Chunk Cookies

This is the closest I've ever followed a recipe. The only thing I different was to freeze the shaped cookies for another 30 minutes. I set for ten minutes based on another review but they needed another 3 minutes. Non-sweets loving hubs loved them!

Rich Italian Sausage and Potato Soup

I spent three hours trying to choose a recipe with turkey sausage and spinach, possibly tomatoes. Nothing in this recipe! But I knew with some modification of the ingredients it might be a winner. It was! Delish! I cooked it years ago keeping most of the original recipe but again subbing spinach, cause we always have so much. The original or with a couple subs, always amazing. I added more potatoes than called for, because I prefer more like a stew, and then a ton of herbs just cause they make a good thing even better. Also, tonight didn't have any cream on hand so used 2% milk, added at the same time as the potatoes to cook down. Worked out perfectly. Next I'm going to figure this one out in the crockpot!

Cheesy Italian Tortellini

This turned out so watery, I switched the tortellini to gnocchi and made soup out of it. Delicious but not quite what I was expecting or hoping for.

Stuffed Zucchini

This dish is amazing! I usually add a 24 oz can of pasta sauce and a can of Italian diced tomatoes. Absolutely no reason to precook anything, though I would make sure the zucchini is spooned out well. Thanks so much!

Greek Chicken Burgers with Feta

These were amazing. So many positive reviews! The only thing I might have done a little different when putting these together was adding fresh herbs from my garden and a tinge more than the recipe called for cause I eyed them. I also made four patties since I wanted them larger and they were going on the grill. I can tell from the family these will be on the list indefinitely! Oh, and by the way, the only burger I've ever eaten that didn't need sauce!

Slow Cooker Zucchini Soup

I thought it was excellent. A lot like the other italian sausage soups, but better for those who have a bumper crop of zucchini. Fiance thought it was good, but I could tell he wasn't overly impressed. I didn't change much and wouldn't. Will definitely make again, though I am not sure I would rave about it for others too.

Chicken Quesadillas

Sauteed the chicken with the onions and peppers since it was easier, used taco seasoning based on what I had and other reviews, and skipped the bacon. Delicious!

Pesto Chicken Penne Casserole

This was very good. But did not have enough pesto flavor! I just made a batch of fresh pesto and this came in my daily dish the next day, so I thought "why not?" For all you reading the reviews and considering halving the amount of pesto, don't do it! Also, do not use Italian diced tomatoes. I'm a die-hard for their delicious flavor, but they will not make this dish the way it's intended! I usually cook from a recipe, and then change things the way I feel I want to eat/taste (I do not tend to write reviews when I do.) Many of them end up the way a collective recipe would be from the people who suggest changes. But then you miss the point of the pesto. Yes, I'm passionate about it. I will choose any dish for the word. If you are like me, I would skip the recipe if you are hoping for pesto-deliciousness. Other things. It didn't need 4C of cheese. 3 is plenty and cheaper (I'm not trying to make it healthy!) It doesn't need 6C of chicken. 3C still ensured plenty of meat (though I will contend that if you add all 6C then I suppose you want all 4C of cheese.) Finally, this does make a lot more than a 9x13 as written. With the only difference being 3C meat versus 6, it was completely overflowing.

Daddy's Sausage and Peppers

Removed the casings before browning and added the onions and garlic with the peppers. Then added two 14.5oz cans of italian diced tomatoes. Served over farfalle pasta and thought it was phenomenal! I make a variation of this all the time with turkey kielbasa so I wasn't expecting much, but I am definitely going to change it up from time to time.

Mashed Potato Quesadilla

I did not like the consistency of these. Reminded me of re-fried beans, which I can't stand. BF and I both agreed that they tasted much better the next day as leftovers.
