Dale's Swedish Meatballs

Reviewed: Jun. 4, 2012
I made the meatballs only. Delicious! I did not put in the green pepper as the hubby doesn't like them. I will if he is not eating them. Great flavor, tender and NOT DRY! I used a can of cream of chicken soup, about 1/2 cup of sour cream, 1/2 soup can of milk and fresh pepper mixed for the sauce. I browned the meatballs and cooked them for about 1 1/2 hours in the sauce. Served over mashed potatoes=perfect comfort food!! Thanks for the recipe!

Apple Cake

Reviewed: Apr. 8, 2012
I have been making this for years, we love it! I do cut back on the sugar a bit. I also just dice the apples. I find that I usually have to add some milk to the batter to get it to cover the apples. Be careful as the top gets brown but it may not be totally cooked yet. You must do the toothpick test with this one! I use cream cheese frosting, but will definitely try the butter sauce next time!

Spanish Rice Bake

Reviewed: Mar. 12, 2012
This recipe gets a 4 for flavor and a 3 for texture. Next time I make I will layer the meat mixture with either crushed tortilla chips, corn chips or corn tortilla shells. The meat mixture is delicious, just is all the same texture. I added some minced garlic to the meat while cooking. I added black beans and green chilis under the delicious blanket of cheese. I did add crushed tortilla chips on top but was thinking while making it that I should have layered it and I was right. (Per our taste) I'll bet this would make great enchilada filling! Thanks for the recipe!

Korean BBQ Chicken Marinade

Reviewed: Mar. 11, 2012
wow. I used 3/4 cup of brown sugar instead of the white. 4 cloves of garlic, fresh ginger, 3 teaspoons of chili paste. Yummmmmmmm! I used this on chicken tenders that marinated overnight then grilled. Served with mac n cheese, which was good, but my family would have preferred rice. Very tasty, a little sweet and nice kick. I think I will use the 4 teaspoons next time, I have never cooked with the chili paste so wasn't sure how hot it was. Overall, great flavor!!

Mexican Tinga

Reviewed: Mar. 4, 2012
We really liked this recipe! I used 3 chipoltes with some sauce and the heat was perfect! I added a dash of cinnamon, 2 chicken bouillon cubes and about a half cup of water to the sauce. Served with refried beans, sharp cheddar cheese, sour cream lettuce and tomato along with the warmed tostada shells. Very yummy! Thanks!

Strawberry Muffins

Reviewed: May 31, 2011
Although they did not look the prettiest, they tasted pretty good! I used frozen berries that were not the greatest anyway and I think that affected the appearance. I added the brown sugar, cinnamon and vanilla as recommended by other reviewers. I sprinkled sugar on top before baking, would probably add a streusel topping next time.

Chicken with Chipotle

Reviewed: May 30, 2011
great recipe! used grilled chicken breast strips that finished cooking in the sauce. Served with extra sour cream, salsa and cheese on corn tortillas. I used 3 chipolte peppers and a little extra adobo sauce and got a perfect amount of heat and flavor for us! Addictive!!!!!!

Shrimp Scampi II

Reviewed: May 21, 2011
Really good. We grilled the shrimp, made the sauce and baked the shrimp for about 10 minutes in the sauce. I did have to thicken the sauce a little with cornstarch, I think I was just impatient with reducing the liquid. Thanks for a new staple recipe!

Donut Muffins

Reviewed: Mar. 6, 2011
I have made these babies at least a dozen times since I discovered this recipe. They are so moist and delicious! The nutmeg is a must! I follow the recipe to a T except for making them in regular muffin size. 1 batch makes 11-12 muffins for me, depending on how much of the yummy batter I eat! I have added diced apples and that is pretty good, but surprisingly not as good as plain! Have added it to a brunch menu, and it was very well received! Thanks for the unique, tasty and easy recipe!

Creamy Chocolate Frosting

Reviewed: Jan. 9, 2011
This frosting was just what I was looking for! I quadrupled the recipe and it frosted and filled a 1/4 sheetcake, with some left over. Used it with a dark chocolate cake and also used cherry pie filling along with the frosting filling. Great creamy texture that was not dry or greasy as homemade chocolate frosting can be. Easy to decorate with such as borders. Thanks!

Pecan Pie Tarts

Reviewed: Apr. 22, 2010
Sooooooo good! I had to halve the filling since I only bought 1/2 cup of pecans. Still made plenty-12 regular muffin tin and 24 mini muffin size. Not too sweet, awesome pecan flavor! We loved the crust also-altogether perfect! Thank you!

Sam's Famous Carrot Cake

Reviewed: Apr. 4, 2010
Really good, moist cake. Made to recipe and everyone enjoyed it. used cream cheese frosting, went perfectly. I did add lemon zest and juice to cake and frosting, but don't know if it really added anything to the already great cake. Thanks for the recipe, I'll use as my staple carrot cake.

Coffee Butter Frosting

Reviewed: Mar. 19, 2010
Luscious! I will play with the coffee more, mine was not a really strong coffee flavor, mostly tasted the chocolate. Great texture, consistency. Great tasting, easy to make frosting! I used this to fill and ice the sides of my "Dark chocolate overload cake."

Deb's General Tso's Chicken

Reviewed: Feb. 28, 2010
Ok, this was a confusing outcome for us. If we were thinking of this as General Tsao's chicken, it did not rate that good. As a honey chicken or something, it was pretty good. It is VERY sweet. The General Tsao's we get at the local chinese place just has a hint of sweet, and lots of kick. With this recipe, I personally thought it tastes like pancake syrup. For some reason, my sauce would not thicken up at all. I only used 6 dried peppers, but threw in some pepper flakes, and it was not spicy at all unless you happened to eat part of the chili. I followed the execution to the letter. Thanks, anyway.

Pistachio Cake I

Reviewed: Feb. 23, 2010
Family favorite! I use three eggs, 2 puddings as alterations in the cake. Usually frost with 1 pk pudding, one cup milk and either 4 oz or 8 oz of Cool Whip. If I bake the cake to decorate, then I use the 4 oz, fill the layers with the pudding mixture. If I bake in a tube pan, then I use the 8 oz for more "frosting." My sister had this for her wedding cake!

Asian Orange Chicken

Reviewed: Feb. 21, 2010
This dish made me very happy!!! Great orange flavor, but not overpowering. Perfect texture on the chicken, perfect consistency of the sauce. So close to restaurant taste without the added MSG we don't need. Very fresh tasting. Love the heat. Kids also loved it, so we will definately be making this again!! Doubled the sauce, used with about 3 lbs chicken. Used regular onions minced, and half white sugar. Thanks Harry for the amazing orange chicken recipe!!! Now to find the perfect general Tsao's chicken that's this easy and without a million ingredients!
