Macomb's Irish Soda Bread

Monster Chip Cookies

This is my family's favorite cookie recipe! I sub out the shortening and use all butter to avoid the trans fats, and sometimes add some white chocolate chips for some of the chocolate. Occasionally I like the addition of coconut, too!

Tuscan Cream Cheese Spread

Excellent! I made for a wine tasting/food pairing party. Used roasted red peppers for sun dried tomato and left out chives. Also removed outer leaves on artichoke hearts as another mentioned. Added some fresh grated Parm cheese, too. Better if left to marry overnight.

Broccoli and Tortellini Salad

Fabulous! I cut sugar in half and used approx. 3/4 c. mayo and approx. 1/4 cup cider vinegar and half the onion. A must for a summer BBQ or a potluck!

Ultimate Double Chocolate Cookies

I prepared chocolate, sugars and butter as for a brownie recipe and melted them all in the top of a double boiler. I continued the recipe as directed, but only had 3 eggs - came out fine! The first batch didn't spread (I used a small cookie scoop) so for the next batch I rolled the dough into balls and flattened slightly with the bottom of a small, decorative bowl dipped in sugar. Came out beautiful and wonderfully chocolaty! Yum!!

Acorn Squash Slices

Very good and such an easy way to prepare acorn squash! Not overpoweringly sweet, which I liked, although the kids prefer it sweeter. It's a keeper!

Awesome Slow Cooker Pot Roast

Fantastic meat and gravy, although a bit salty. I seared meat in cast iron pot w/ olive oil on all sides before adding to crock pot. I added one can of low sodium beef broth for water, and also three sliced onions. I thickened gravy with a cornstarch/water combo that I stirred into gravy mixture after removing meat. Leftovers were also great!

Panzanella Salad

This is fantastic. I didn't add olives or cheese, and used more fresh basil. My daughter loved the garlicky croutons on their own (I did add a bit of dried basil to those before baking).

Delicious Apple Salad

I made this for my kids as they don't care for coleslaw or potato salad. My husband said it was his favorite out of the three! I halved the recipe and used walnuts instead of pecans and half granny smith, half yellow delicious apples. Very refreshing.

Hungarian Mushroom Soup

A very tastey and comforting soup! I did add extra mushrooms (1.5 lbs) as others suggested. I didn't use dill or the parsley, but added some cooking sherry during the first and second simmer (about 3 Tbsp total) which was wonderful. A must try - I'm looking forward to the leftovers!

Spinach and Mushroom Pinwheels

I do catering on the side, and decided to try this interesting recipe for a job I just did. What a hit! Everyone loved them, even some who claimed not to like spinach. I skipped the fry pan for the spinach and used to microwave. Also added 4 strips of cooked and cumbled bacon to the finished filling. Very good, but will try adding more next time! Dough for this was so good, and would be excellent with a variety of fillings.
