Chef John's Macaroni and Cheese

Mac & Cheese with a little "twang"! It was definitely good, but i think the cayenne pepper was a tad too spicy for my kids...i think next time i'll only use 1/8 tsp. instead of 1/4 tsp. of cayenne pepper. Otherwise, it was really good!! :)
