Apple Pumpkin Muffins

I found these to be too dense and heavy. The flavor was good, though. I just wish the texture had been better. The first day, the muffin papers were difficult to remove and pulled off chunks of muffin. The next day this was no longer an issue. So if you use muffin papers, let the muffins sit overnight before you try to remove them. I skipped the topping and just sprinkled the tops with some cinnamon and white sugar before baking. I'm going to try these again and work on improving the texture.

Banana Crumb Muffins

Overall, these had a great taste, but I found them to be too greasy, for lack of a better word. There were small pools of melted butter at the bottom of each muffin cup when I removed them from the pan. I agree with the other reviewer who said that the wet ingredients did not mix together well. I would suggest beating the butter and sugar together first, then adding the bananas. Also, the crumb topping was too moist and not crumbly enough. That said, I *will* make these again, but I will cut back on the butter, maybe replacing some of it with applesauce, and I will leave off the crumb topping.

Tangy Apple Chicken Loaf

This was delicious! My husband loved it, and I will definitely make it again. I made a few minor changes. I only used about 2 tablespoons of chopped onion, and about 1 stalk of celery. I left out the pepper (my husband hates pepper), and the sage. The poultry seasoning I used already had quite a bit of sage in it, so I didn't want to overdo it. I used 1 cup of breadcrumbs instead of 1/2 cup. The mixture was too 'wet' with only 1/2 cup. Lastly, I didn't use mustard for the glaze. I'm not a big fan of mustard. So I substituted it with 2 tablespoons of Jack Daniel's Honey Smokehouse BBQ sauce instead (I'm sure any BBQ would do). It took an extra 10 minutes or so in my oven for the center to reach 180 degrees. I served it with homemade mashed potatoes and green beans. It was fabulous!

Chicken Florentine Casserole

I made this using the changes suggested by others. I did not precook the chicken, I cut down on the Italian seasoning (only 1 teaspoon), used frozen spinach instead of canned, used milk instead of cream, and used real bacon. It smelled delicious, and the taste was quite nice, but... This was far too rich and fatty for us. The 1/4 cup of butter in the sauce makes it very greasy. It was also too soupy and we found the garlic to be overpowering. If you have issues with fatty foods or rich foods, stay away from this one! My poor husband was up in the bathroom during the night. I also ended up with a "rich" feeling in my stomach. I really wanted to love this one, especially given the rave reviews. Unfortunately, it just wasn't right for us.

Caramel Apple Pork Chops

This was good, but didn't seem to produce enough of the caramel sauce. The pork chops were very tender, in spite of the lack of sauce. The overall taste was very nice, though, and my husband liked it. Next time I'll make sure to double the sauce.
