Butternut Squash Pizzas with Rosemary

Yum, I cooked the squash (used veggie peeler to thinly slice) and onion on the stovetop and added the balsamic as others did, in addition to the Asiago I added goat cheese, topped with the oil and more fresh ground black pepper, delish. Used the NY pizza dough recipe...very thin crust was perfect.

Chili Jack Chicken

Everyone loved this meal! The only changes I made was to cube the chicken and use a mix of shredded cheddar and jack...i may have used about 3/4 cup too...delish over white rice!

Blackened Fish

Loved it and yes it smoked up the kitchen a bit but totally worth it! I cut all three peppers in half so the kids would eat it and my 4yo daughter said it was a little spicy but she still ate it ALL.

Turkey Tetrazzini II

Loved this! I halved it and added 1 tsp of garlic powder. Ran short of the parm so subbed some dubliner hard white cheddar. Added a few frozen peas too but it's not necessary. Used bow tie pasta cause thats all I had. It came out like a mild garlicky mac and cheese. Finished it on the stove top instead of the oven because I was in a rush to get it on the table. Perfect post tday dinner!

Hand Held Hashbrown Casseroles

We loved this! I did double the eggs and cheese...8 eggs and 2 cups of cheese. Omitted the butter and ham. Used frozen diced peppers and added to the sausage along with a Tbs of dried minced onion. The bob evans sausage cooked up really lean so I didn't need to drain it...they were just moist enough with out the added butter. Made 1/2 in muffin cups and 1/2 in mini muffin cups - filled the cups to the top. Our guests asked for the recipe! This will be my go to breakfast for when we have house guests!

Beef Noodle Shepherd's Pie

My husband was really skeptical, this is not real shepherds pie, but he loved it. I halved the recipe for two but needed to add a little more water to cook the macaroni. I used homemade onion soup mix from this site (easy to half) and also added a little milk and cornstarch to thicken it up before baking it. I made homemade mashed potato's using 3 and it all fit really well in my small round corningware dish. Topped with a bit of cheese too. NO LEFT OVERS :)

Cheesy Ranch Potato Bake

Love it! I use about 1/2 stick of butter and I don't add it until I add the cheese and dressing. I use kraft dressing and seasoned salt instead of regular salt. The potatoes are super soft after 1 hour, and I cube them 1/2 inch or so. I top with a bit of cheese and broil to brown. YUMMY!!

Flank Steak with Avocado Salsa

Great recipe. I made it exactly as written and everyone enjoyed it. Next time though, I'll 1/2 the cinnamon and the lime juice in the salsa (I used fresh lime and it was a bit strong).

Kale Chips

Holy awesome! I had the oven temp at 350 and my small pizza sized tray was done in 5 min. I skipped the vinegar and just oiled and garlic salted them. They actually crunch! YUMMY!!!
