Bubba's Jambalaya

Deelish!!! I left out the bacon, shrimp, and ham because I didn't have them and used olive oil instead. So good, will definitely make again.

Red River Beef Stroganoff

Really great! For some reason mine wasn't as thick as I'd hoped, but I used some of the sauce and mixed it with a roux to thicken it and it was delish! My husband doesn't eat mushrooms, so I left them out. I also added a splash of red wine. Will definitely make again. Thanks!

Classic Texas Caviar

This is soooo good (and pretty good for you if you eat it with tortilla chips and not Fritos)! Of course, it tastes best with Fritos but you can make it healthy if you want. Fantastic recipe! This one is definitely a family favorite.

Green Salad with Cranberry Vinaigrette

Excellent dressing! I use dried cranberries instead of fresh, and I add sugar. It is too tangy for me without it. Everyone loves this salad!

Greek Chicken Pasta

Absolutely wonderful! I made some additions. First, I used fresh Italian parsley, and added fresh baby dill (about 5 tbsp). I juiced 1/2 a lemon. I probably used about 1 cup of feta (I love feta!!!). I didn't add the oregano, it didn't seem to go with the dish to me. I made homemade pasta noodles. I also used small cherry tomatoes, halved. I did not add the salt, as I did not think it needed it, since feta is a salty cheese. Topped with fresh ground pepper! I served the pasta separate. This dish would be great alone, or with some Greek lemony rice. DELICIOUS!!!

Pasta Primavera Sauce

This was pretty good, my husband loved it. It is very healthy and the taste reflects that. I think it would be better if I had used fresh herbs, and I don't think I really like cooked carrots, or any carrots for that matter. My husband said this recipe is definitely one he would like to have again. We thought maybe next time we have it we will serve it over poached chicken on a bed of rice.

Moroccan Chicken

I thought this dish was ok, and my husband really liked it. I will likely make it again because of its nutritious value--low in fat and high in protein. I forgot to get the tomatoes and chicken broth at the store so I did without. Instead, I used to small cans of tomato sauce and then used the empty can to add two canfuls of water to the dish. I served it with Curried Cumin Potatoes (a good side dish when served under the Moroccan Chicken, added lime and ginger).

Curried Cumin Potatoes

These were just ok. They were really pungent. I made Moroccan Chicken as the main dish, and when spooned over the potatoes it was really good. However, I probably will not make them again.

Southwestern Turkey Soup

I have made this many, many times! It is so delicious. I change it a bit though: we use chicken (don't like turkey), chicken broth instead of vegetable, I use pepper jack cheese rather than plain jack, and I pour the soup over a handful of crushed thick corn tortilla chips over the top just before serving. We also use fresh cilantro! Then we top it with a hearty dollop of sour cream! DELICIOUS!
