Southwest Chicken

Easy and delicious. We added a little chili powder and more green chiles as well as a little melted cheddar on top, however it is great even without the cheese. We will try adding onions and garlic as others suggested. It has a lot of potential for easy modifications which makes it a great recipe for a quick weeknight meal.

Yummy Sweet Potato Casserole

SCRUMPTIOUS!! My co-workers LOVED this and people reminded me the next day to send them the recipe. The topping is what sets this apart. I made the potatoe mixture the day before and then put the topping on it and baked it the next day. Definitely bake the potatoes...I baked 3 large potatoes in foil for about on hour at 400 degrees until they get a little "mushy". I used just under 1/2 cup condensed milk since I didn't want it to be soupy as others noted. I added 1/2 tsp of cinnamon and will likely cut the sugar just a little bit in the potato mixture next time. I doubled the topping as others noted but then didn't put it all on as I thought it might be too much. However, I will add a a tiny bit more pecans next time since I think the texture and flavor of the pecans are the magic in this recipe. Thanks Tina B for a wonderful holiday recipe!

Grilled Salmon I

This was so delicious!! The only modification we had was half the sugar. The flavor on the grill was outstanding! I have a feeling that this will be served a lot during lent. We served it with grilled asparagus (salt, pepper, olive oil...some sprinkled parmesan cheese on it too). We also had grilled pineapple (2 tbsp honey, 1 tbsp lime juice, 1 tbsp olive oil mixed with about a tsp of cinnamon as a marinade - see MayoClinic's recipe). We really enjoyed this salmon recipe!

Fig Cake I

We loved this. It was a great spice cake although the fig flavor was subtle. We didn't put any icing on it as a personal preference. The only modification I made was that I use half the cloves and nutmeg but added a little more cinnamon.

Garlicky Green Beans with Mushrooms

I really liked this recipe! I didn't change a thing...because wouldn't it be a different recipe then?? I tend to favor recipes that have lots of reviews so I was hesitant to try this. However, since it had 2 of my favorite ingredients (green beans and garlic), I decided it was worth a try. It had great flavor, but it was not overpowering...and it didn't taste like it came off a corporate website. Simple and delicious! Thanks for sharing it...I will make it again!

Sensational Sirloin Kabobs

These kabobs were SCRUMPTIOUS! My dad often grumbles when presented with a new recipe, but he wants to have this again. The given ingredients were wonderful, especially the mushrooms. I may try other people's suggestions with chicken and onions.

Butterscotch Gingerbread Cookies

I tried this cookie right out of the oven and wasn't sure what I thought of it at first, however, I have to say they do grow on you pretty quickly. They are very moist and flavorful...and the unique taste makes them stand out.

Grandmother's Oatmeal Cookies

These cookies were very delicious! They have a great texture...not too chewy, but they don't turn hard either. I prefer chocolate chips, so I deleted the cinnamon, raisins and walnuts and put in a cup or so of semi-sweet chocolate chips the second time I made them. Otherwise, it is a great recipe!

Spicy Bean Salsa

This is delicious! With less dressing, it makes a great side dish as well...I only used 3/4 c. of dressing. I had to use 4 fresh jalapenos, but I might put in 1 or 2 more next time.

Absolutely the Best Nacho Dip Ever

Delicious! I've taken it to parties and people love it! The cocktail sauce makes it stand apart and people notice there is something different about it but can't figure out what it is. Be mindful of the salsa...try to keep it thick and chunky so it doesn't water it down. Thanks to Jeff for submitting this.

Chicken Enchilada Dip

Great dip! I've taken this to 2 parties and get tons of compliments on it. I've never had throw out the leftovers. I did add an extra jalapeno the second time for a little more zip, but it is great as it is. I also serve it with salsa to mix it...I really like it with the salsa. Thanks to Kelley for submitting a great recipe.

Absolutely Ultimate Potato Soup

This is really quite yummy! I took it to a football party and everyone loved it. I have a tendency to add a little more garlic, but the recipe is great as its written. Thanks to Karena for submitting it.
