Caramel Apple Dip

Everyone loves this when I make it. It's great served immediately, but it also refrigerates well and is soft enough to serve right out of the fridge.

American Lasagna

This is great! I usually add some canned tomato sauce to the sauce, and I leave the salt out of the cheese mixture. My family loves this sauce recipe so much that I will make a great big batch for spaghetti sauce, and then I freeze the leftovers in small containers for future use.

Raspberry Trifle

I made this for a New Year's party. It was a big hit! I made a few changes due to lack of ingredients on hand, but I think it would have been just fine as written. My changes were to use a prepared yellow cake mix, mixed berries sweetened with a bit of sugar, and grated dark chocolate instead of cocoa. My tip would be to make sure the cream cheese is good and soft, or folding in the cream will be a challenge. Also, this is very simple, but it does take awhile to put together, so start plenty early.

Gourmet Sweet Potato Classic

This was a really big hit at our Thanksgiving table. The only change I made was to peel and boil the sweet potatoes like regular potatoes. This seemed a lot easier to me than what the recipe suggests. I made this the day before, then baked it just before dinner. I was afraid this would affect the topping somehow, but it was great!

My family loves this--it makes a nice side dish for BBQ, and it adds so much more to the meal than just plain old rice. Whoever it was that said it turned black before they got it in the oven was NOT following instructions, because this was super easy to make!

Baked Asparagus with Balsamic Butter Sauce

This is the perfect way to prepare asparagus. I had never baked it before, and I don't think I will ever go back to steaming/boiling/etc. The sauce is just right, too.

Fruited Ice Cream

This is so easy, and if I half it, it's just the right size for our little ice cream freezer. Our favorite is peach, but we have also tried strawberries and various other fresh fruits. I like the texture best if I put the fruit in a food processor rather than chop it, but I still leave it a little bit chunky. It's smoother, and the fruit juice really gets into the mixture this way.

Easy Homemade Vanilla Ice Cream

This is a great recipe for ice cream football, a favorite family activity. First, half the recipe. Then put all the ingredients in a quart size ziploc bag (only half recipe will fit). Double bag it so it stays secure. Then fill a gallon size ziploc with ice and salt, nesting the bag of ice cream ingredients in the middle of all the ice. Double bag the gallon bag so it stays secure. Then wrap the whole package in several layers of newspaper and packing tape. Take it outside and play a game of football or keep away or just toss it around for an hour. When you unwrap the whole thing, you will have easy ice cream!
