Easy Homemade Vanilla Ice Cream

This is a great recipe for ice cream football, a favorite family activity. First, half the recipe. Then put all the ingredients in a quart size ziploc bag (only half recipe will fit). Double bag it so it stays secure. Then fill a gallon size ziploc with ice and salt, nesting the bag of ice cream ingredients in the middle of all the ice. Double bag the gallon bag so it stays secure. Then wrap the whole package in several layers of newspaper and packing tape. Take it outside and play a game of football or keep away or just toss it around for an hour. When you unwrap the whole thing, you will have easy ice cream!

Fruited Ice Cream

This is so easy, and if I half it, it's just the right size for our little ice cream freezer. Our favorite is peach, but we have also tried strawberries and various other fresh fruits. I like the texture best if I put the fruit in a food processor rather than chop it, but I still leave it a little bit chunky. It's smoother, and the fruit juice really gets into the mixture this way.

Apple Orchard Punch

Divine Chicken with Green Beans

This is a delicious way to use those fresh summer green beans. I made it twice, the first time as written. The second time, I added 1/2 cup chicken broth while sauteing the chicken, which made it a lot more moist and flavorful. It also made the sauce too runny in the end. Next time, I think I will add just a few tablespoons of broth.

Hillary Clinton's Chocolate Chip Cookies

I didn't have shortening so I used butter, so my review may not really count for anything. In any case, the dough tasted phenomenal and I had really high hopes, but they cooked up flat and terrible. Total waste of ingredients. I didn't cook up all the dough yet. I may tinker with it to see if it is salvageable.

Easy Brownie Shortcake Dessert

This was pretty delicious. I only used strawberries because the kiwis weren't ripe enough. And I probably doubled the amount of Cool Whip in the sour cream mixture. It just didn't look like it was going to go very far without something more. I also took the reccommendation of another reviewer and baked the brownie in two rounds so I wouldn't have to cut it. It was super duper easy, and pretty delicious!

Onion Chicken in Balsamic Sauce

This was just okay for me, but my husband loved it. My only changes were to use 2 large breasts cut into strips, to do the whole thing in an oven-safe skillet so I didn't have to transfer to a casserole, and then to thicken the sauce a bit with cornstarch. I served over pasta. I thought the vinegar was overwhelming, but I might try again with less.

Peanut Butter/Chocolate Chip Cookie Bars

These are pretty good for how easy they are to make. Good with walnut, too. My one suggestion is to refrigerate before cutting, or the crust will kind of fall apart.

Gourmet Sweet Potato Classic

This was a really big hit at our Thanksgiving table. The only change I made was to peel and boil the sweet potatoes like regular potatoes. This seemed a lot easier to me than what the recipe suggests. I made this the day before, then baked it just before dinner. I was afraid this would affect the topping somehow, but it was great!

Fresh Broccoli Salad

While this recipe is tasty as is, I like to make it with craisins rather than raisins, and sunflower seeds rather than almonds. It tastes great, and it looks kind of festive for a Christmas potluck.
