Chicken and Corn Chili

Wonderful recipe! It was a little thick, as others have mentioned. So I threw in a little tomato sauce and cut back on the chicken. I think I added more beans too.

Chickeny Chickeny Rice

My family loves this--it makes a nice side dish for BBQ, and it adds so much more to the meal than just plain old rice. Whoever it was that said it turned black before they got it in the oven was NOT following instructions, because this was super easy to make!

Fresh Broccoli Salad

While this recipe is tasty as is, I like to make it with craisins rather than raisins, and sunflower seeds rather than almonds. It tastes great, and it looks kind of festive for a Christmas potluck.

Gourmet Sweet Potato Classic

This was a really big hit at our Thanksgiving table. The only change I made was to peel and boil the sweet potatoes like regular potatoes. This seemed a lot easier to me than what the recipe suggests. I made this the day before, then baked it just before dinner. I was afraid this would affect the topping somehow, but it was great!

Raspberry Trifle

I made this for a New Year's party. It was a big hit! I made a few changes due to lack of ingredients on hand, but I think it would have been just fine as written. My changes were to use a prepared yellow cake mix, mixed berries sweetened with a bit of sugar, and grated dark chocolate instead of cocoa. My tip would be to make sure the cream cheese is good and soft, or folding in the cream will be a challenge. Also, this is very simple, but it does take awhile to put together, so start plenty early.

Royal Hawaiian Pie

This was actually quite good, but must have looked unappetizing because hardly anyone tried it. This would be better at a dinner where you are the sole provider of desserts, rather than at a potluck. If it's the only option, people will try it and like it. If not, it may get skipped over. Oh well, more for me to take home and eat!

Creme Fraiche Chicken

This was a very good recipe. The only change I made was to substitute broth for the white wine, and I actually used more than the recipe called for. My only complaint was that it didn't look very appetizing. Maybe it was the broth sustitution that gave the sauce a particularly unattractive color.

Fruited Ice Cream

This is so easy, and if I half it, it's just the right size for our little ice cream freezer. Our favorite is peach, but we have also tried strawberries and various other fresh fruits. I like the texture best if I put the fruit in a food processor rather than chop it, but I still leave it a little bit chunky. It's smoother, and the fruit juice really gets into the mixture this way.

Easy Homemade Vanilla Ice Cream

This is a great recipe for ice cream football, a favorite family activity. First, half the recipe. Then put all the ingredients in a quart size ziploc bag (only half recipe will fit). Double bag it so it stays secure. Then fill a gallon size ziploc with ice and salt, nesting the bag of ice cream ingredients in the middle of all the ice. Double bag the gallon bag so it stays secure. Then wrap the whole package in several layers of newspaper and packing tape. Take it outside and play a game of football or keep away or just toss it around for an hour. When you unwrap the whole thing, you will have easy ice cream!

Classic Whole Wheat Bread

I followed the recipe as written, and I was not terribly pleased with the results. Too dense, kind of blah. It may be an elevation issue--I just moved to a place with quite a difference in elevation from my old home, and all my recipes have to be adjusted. Anyway, I may try again with some of the suggested modifications, but then again, I may just keep looking for another.

Slow-Cooker Chicken Tortilla Soup

I followed the recipe, except to cook the chicken in the soup then shred before serving as other reviewers suggested. I found that the soup did not have enough tomato flavor for my personal taste, so I ended up adding a couple of small cans of tomato sauce before serving. That addition brought it up to 4 or 5 stars for me, but without it, the soup was not my favorite.
