Coconut Cake IV

I never really cared for coconut until I tried this recipe. But wow! It was really yummy! I make this all the time now. I bake them as cupcakes instead of a whole cake so I can make sure everyone gets a piece.

Baked Dijon Salmon

This was the first time I ever cooked a real meal for friends and it was a success! At first I was worried because I had never cooked fish before, but this recipe is so easy and foolproof. I followed the recipe exactly and the salmon turned out wonderfully. It certainly impressed all my friends!

Banana Crumb Muffins

These were yummiest muffins! My boyfriend took one bite and told me it was the best muffin he's ever tasted (and I bake once a week!). I also folded walnut pieces in the batter right before spooning them into the muffin cups.

Cooking Light magazine's Chicken Parmesan

Easy and delicious! I didn't simmer the chicken in the sauce because my boyfriend didn't like too much sauce. Instead, after cooking it through in the skillet, I sprinkled the cheese and put it under the broiler until the mozzarella melted. Then I placed the chicken pieces on plates of sauce (a lot for me, a little for my boyfriend). It was really good!

Chocolate Crinkles II

These crinkles were perfect. To make them Christmas-y, I added red and green sugar sprinkles to the confectioners' sugar before rolling the cookies.

Pumpkin Chocolate Chip Muffins

I made three batches last night trying to perfect this recipe. I first tried substituting applesauce for the vegetable oil, but the final texture was spongy and weird. It also didn't have enough spice for me. Next batch I used vegetable oil and added more cinnamon and nutmeg. Yummy flavor and better texture. The final batch, I used brown sugar instead of white. Perfect! I'm going to make more -- gotta finish that huge can of pumpkin.
