Baked Parmesan Tilapia

Excellent excellent excellent! Did I mention it was really good? Moist, flavorful, and easy to prepare, although kind of messy. I did a few small things differently, but overall I stuck to the recipe as written. Instead of dredging the fish in the flour first, I tossed some flour in the breading bag to make sure more breading that flour stuck to the fish (it was also less messy that way!), and I sprinkled some extra Parmesan over the top of the fish before serving. I thought we were going to have a fight break out over the last piece of fish- next time, I'll have to make more!

Asian-Inspired Honey-Vanilla Chicken

Good recipe! I used a 6x6 pan instead, and made some extra sauce to let the chicken continue marinating while it cooked. The chicken was super tender, and really flavorful. Next time I make it, I might tweak the amount of sweetness- it was a little much.

Anniversary Chicken I

Assembly and cooking were easy enough. Too salty for my taste. It will probably end up in the dinner rotation, with some alterations. Maybe 3/4c Ranch and 1/4c teriyaki will help with the saltiness. Overall a decent dish.

Alaska Salmon Bake with Pecan Crunch Coating

Great recipe. No one in my family (other than me) is a salmon fan...until tonight! They all loved it. I would recommend, however, using aluminum foil on the baking sheet to prevent the skin from sticking.
