Muenster Chicken and Mushrooms

This came out great, but i made a few changes using other reviewers advice- I mixed grated parmesan cheese in the breadcrumbs, used eggs instead of milk, and sauteed cut cherry tomatoes with the mushrooms. Used chicken cutlets & cooked them a few minutes on each side. Put them in a dish with a little chicken broth, piled mushrooms and tomatoes on top, and then covered with a slice of Jarlsberg cheese, for more flavor. Then i just put it under the broiler for about 5 minutes and it was done.

Gazpacho

This recipe is great, the only problem i had was being able to fit everything in the blender. i blended each ingredient seperately and added them to a pot where i mixed them when i was done. Also, might want to add a little less tomato juice (add it last) so that its thicker. Lastly, would be great with a half of jalapeno to spice it up.

Chicken Piccata II

For this recipe, i substituted veal cutlets for chicken, which took about 6 minutes on each side. Also, instead of the chicken boullion in water, i used a dry white wine and added capers. It came out fabulous.

Coconut Shrimp I

What a hit! This recipe took a little more time than I expected, but it was well worth it. I did about 40 shrimp, and froze half of them. I put them on the tray in the freezer for about 1/2 hour, then wrolled the wax paper with the shrimp, so that none of the shrimp were touching. Took the rolled paper and placed in a ziploc for a quick appetizer at a later date.

Bahama-Mama Pork Chops

This recipe was so easy, and such a hit! I served it over cous-cous with asparagus stalks. Everyone loved it. It was a little hot, so next time I may not add so much hot sauce. Also, craisins (dried cranberries) make an excellent substitute for raisins.
