Easy Never Forgotten Guacamole

Reviewed: May 3, 2004
This recipe is VERY bland. I doubled all of the seasonings before it was palatable.

Daddy's Guacamole Dip

Reviewed: May 10, 2004
This is a great recipe. My daughters & I added minced garlic, (I did not use garlic powder) and several drops of red hot sauce to give it some pizazz after leaving it to refrigerate overnight. I would agree with the suggesstion that a whiz of the cottage cheese a couple of times in the processor just to get the large lumps smlaler would be a good idea.

Barley and Mushrooms with Beans

Reviewed: May 10, 2004
This is an absolutely delicious dish, so easy to make, and economical. I made it about 4-5 weeks ago for the first time and have made it several times since because my husband really likes this one as much as I do.

Fantastic Black Bean Chili

Reviewed: Dec. 1, 2004
This is a most delicious & easy recipe, and to tailor it to the tastes of my husband and myself, I added several cloves of garlic & a can of diced tomatoes with green chili. I have made it in a large pan & I have made a very large batch, simmering it in a roasting oven. Thank you..this is great!

Green Chile Frittata

Reviewed: Sep. 26, 2005
I have made this several times for guests and for pot luck. Serve with salsa & sousr cream. Everyone loves it and I am frequently asked for the recipe. I have changed the cheese to mozzerella, another time to colby/jack. I always prepare it a day in advance & micro to warm. Stays moist.

Sun-Dried Tomato and Pesto Cheese Spread

Reviewed: Jan. 3, 2006
Unlike others, I did not enjoy making this recipe, also find it expensive. It was tedious. I followed the directions exactly, although halving it, and I just did not find it tastey enough to go through all of the trouble again.

Broccoli Chicken Casserole I

Reviewed: Jan. 27, 2006
I used the basic principal of this recipe, but I thought it might be too dry. I boiled the chicken in low sodium chicken broth with and onion, salt & fresh ground pepper. When I steamed the broccoli, I also added salt and fresh ground pepper. I used all of the broth and onions from the chicken to blend with the soup. Served over rice. My husband said this was Deelicious! Now..it's a 5 star to him!

This is a quick and delicious recipe. I did add an additional can of low sodium beef broth for the noodles to soften.

Ultimate Spicy Spud Soup

Reviewed: Jan. 23, 2007
This is an easy recipe, and I added only 3/4 t of cayenne, additional water, but thought it rather spicy but not tastey. Followed the suggestion to use chicken soup base & it changed the flavoring to a more palatable recipe.

Carrot, Potato, and Cabbage Soup

Reviewed: Dec. 11, 2011
We really enjoyed this recipe. It is hearty and healthy. I always double for leftovers and the freezer. I did saute the veggies; carrots, celery, onions, then cabbage prior to mixing all ingredients. I really think the saute adds to the flavor of the stock. Passed the recipe on to pfiends and family! Making it today, a football Sunday afternoon. Thank you, Dan, for submitting this recipe. I wanted a potato soup without the fattening & cholesterol laden cream.

Cabbage and Smoked Sausage Soup

Reviewed: Jan. 5, 2014
Made this recipe today as the snow was falling heavily outside, and, enjoyed the fragrance of the ingredients simmering all afternoon in the soup pot! :-). I didn't change much. I did sauté the sausage, removed, and, then, I always sweat my vegetables prior to adding liquid ingredients; carrots first, celery, etc. I also added an additional can of darined kidney beans. This is a savory, healthy recipe when using low sodium products.

Greasy Chicken

Reviewed: May 27, 2014
Thought this would be healthier than coating and frying in grease. Removed skiin, used no salt butter & lower sodium soy sauce to keep with less calories, etc. Neither my DH or I liked this at all. Will not make it again.
