Baked Potato Soup

Reviewed: Oct. 13, 2009
Very good soup recipe. The kids loved it topped with some chedder, bacon and green onions. I diced the potatoes, coated them lightly with olive oil, salt and pepper and roasted them at 350 degrees till they are 2/3rd cooked. I didn't have any dried basil but added some fresh nutmeg, which gave it another layer of yumminess. Will definitely make this recipe again... Soon.

Shrimp Lemon Pepper Linguini

Reviewed: Apr. 28, 2008
I have made this recipe many times and it has become a favorite in my house. To make the sauce more saucey I double the amount of chicken stock and wine. I also reserve 1/2 cup of pasta water and add it if needed.

Easy Italian Chicken

Very good chicken. I like recipes that are this good and require ingredients that are always in my pantry. I did substitute the water with chicken stock.

Macaroni and Cheese V

Reviewed: Mar. 11, 2008
I have always used Martha Stewart's recipe for mac and cheese until I found this one. Sorry Martha. This is much better. Before putting it in the oven I top with a cooked crumbled bacon. YUM! Other reviewers complained about the cheese sauce. I think that it's important to use a very good quality of chedder cheese. It makes all the difference in whether you have a creamy sauce or a lumpy sauce.

Brown Sugar Meatloaf

Reviewed: Mar. 11, 2008
Great recipe. My family turned up their noses when they saw meatloaf on the table, but they all loved it. The sweetness of the brown sugar sauce is great. Leftovers are even better.

Across the Border Tequila Shrimp

Reviewed: Mar. 11, 2008
Easy to prepare and very, very tastey. Didn't have any chili powder so used red pepper flakes instead which gave it a nice kick. Best to use a clear tequila.

Batman's Best Caesar Dressing

Reviewed: Mar. 11, 2008
The first time I made this dressing I didn't have the anchovy paste and thought it was very good. The second time I made it I used anchovy paste and WOW what a difference. I love this dressing!

Easy Asparagus

Reviewed: Oct. 19, 2006
Good way to prepare asparagus. I didn't have lemon pepper so I used fresh lemon juice. I too omitted the whole wheat crackers.

No Name Orange Roughy

Reviewed: Oct. 19, 2006
Great recipe. I added a couple of cloves of fresh garlic with the green onions, then added the wine and tomotoes and allowed the liquid to reduce by half before adding the fish. I only had two fillets so I added some fresh shrimp, amd boy did they come out good. I too substituted the olives for capers and ommitted the feta - only becuase I didn't have any. This really made a great meal. The kids loved it too. Can't wait to make this dish for my next dinner party.

Chicken Breasts Pierre

Reviewed: Feb. 9, 2006
Great Recipe! I have made this several times and have not used boneless chicken breasts. I sautee chicken pieces (dark) then mix the remaining incredients in a bowl and add to the chicken and simmer until chicken is done. The meat is so tender that it practically falls off the bone. I recently made this dish for a dinner party and had three requests for the recipe.

Hot Sausage Dip

Reviewed: Feb. 9, 2006
Made this dip for a superbowl party and turned out good. I used spicy Jimmy Dean sausage and with the added crushed pepper, it was good and spicy. The sour cream made the dip creamy and did not require reheating or serving in a crockpot to maintain its yummyness. I will make this again.

Pecan Salmon Roll

Reviewed: Feb. 9, 2006
I found this recipe to be okay - nothing too exciting. I used a high-end can salmon in the hopes that the taste would be great, but like someone else commented "it tasted like tuna fish. I won't waste $8.00 on salmon to make this again. Sorry.

Sesame Crusted Mahi Mahi with Soy Shiso Ginger Butter Sauce

Reviewed: Oct. 25, 2005
If there were more stars offered, this recipe would get them. It is FANTASTIC! The sauce is out of this world good! I didn't use mahi mahi becuase it wasn't fresh, so I used orange roughy. I too was unable to find shiso leaves. I served the fish on a bed of jasmine rice (Allrecipe.com recipe) for a dinner party and everyone raved about it. This is my new favorite fish recipe.

Easy Focaccia

Reviewed: Oct. 12, 2005
This is a 10-star recipe. I too added the rosemary and cheese to the dry ingredients and sprinkled additional cheese on top. I couldn't believe how big the loaf turned out and thought that we would never be able to finish it all. Between 6 people and a bowl of infused olive oil, the loaf was gone.

Beef and Parmesan Pasta

Reviewed: Sep. 7, 2005
I thought this dish was very good. I sauteed a small onion and fresh garlic, added the beef along with dried thyme, basil and oregeno (since I didn't have italian style tomatoes). When the beef was done, I added the broth, tomatoes, and pasta and cooked everything together. I didn't add the zuchinni since the kids would turn up their noses and not eat it. The cheese added a wonderful creaminess. It made a great dinner and I will definitely add it to my cookbook of recipes.

Pesto

Reviewed: Aug. 9, 2005
Fantastic pesto! I used cashews since I didn't have pine nuts and 2 cloves of garlic instead of 4. I also added the parsley, and a bit of sea salt. I tossed the pesto with penne pasta, sun dried tomoatoes, and grilled chicken. All I can say is YUM! Thanks Valerie!

Ginger Glazed Mahi Mahi

Reviewed: Aug. 2, 2005
Not impressed, but it was probably my fault. I marinated the fish for a few hours and I think think that it overpowered it. I did not have fresh ginger so I used a couple of teaspoons of ginger-garlic paste. My husband liked it so I will try it again, but marinate for the 20 minutes like the recipe states.

Classic Spanish Sangria

Reviewed: Jun. 8, 2005
Not impressed. I used Columbia Crest Merlot/Cabernet blend and added peaches and apples like others suggested. I blended the sangria with 7-up and without that I don't think anyone would have drank it. I took this to a Memorial Day picnic so I made a double batch based on the reviewers comments and ended up throwing away over half of it.
