Perfect Pressure Cooker Pot Roast

My family liked it a lot. I added a couple of potatoes and carrots halfway through the cook time so they wouldn't get too mushy. Worked fine. I also substituted 2 cups of water and a bouillon cube in place of the beef broth. With the extra vegies, it didn't seem too salty. It's a good and quick recipe for those days when there just isn't much time. All in all, a fine recipe for an American classic.

Mandarin Orange Cake I

Being a kitchen snob, I didn't think I'd every use whipped topping, cake mix, or instant vanilla pudding, but this recipe has converted me to the conveniences of modern cooking! My kids loved it and frankly, I did, too. It sure beats making cakes from scratch.

A very classic flavor and look! But alas, it's a heart attack on a plate. I wouldn't have it too often, but as a special treat for guests, it truly looks nice. I'd like to sauce to be just a bit lighter.

Mandarin Almond Salad

I've made this many times with whatever type of lettuce I have on hand (but never iceberg!) and it's always good. Advice on the sugared almonds: Let the sugar start carmelizing just a bit before you add the almonds. Adding the nuts too early can make them toast too brown before the sugar carmelizes. Adding the nuts too late will mean the sugar browns before the nuts get toasted. You'll have to experiment a little to get this just right, but it's worth it! I've use chopped walnuts, too. Very delicious! My guests loved it, too.

Mall Pretzels

Delicious right out of the oven. I brushed on the soda/water solution and baked them on a Silpat mat. No sticking at all! It takes some patience to roll these out to the right thickness. I thought I had, but they puffed up in the oven and looked more like pretzel rolls. The thinner ones definitely had the better texture. I'd make these again.

Spanakopita (Greek Spinach Pie)

I fold these into appetizers (like little paper footballs). Always a big hit with the guests who can't believe I made these myself. They freeze well for months!

Worth the effort! I've made this several times, adding okra and rice on occasion. I've substitued canned tomatoes when I didn't have fresh. No change. If you're adding rice, reduce the flour some so you don't end up with a solid mass.

Yummy. Being a food snob, I didn't like the idea of using "whipped topping," but it's great in this. I didn't have cardomom powder, but used cardomom seeds by simmering them along with a bit of cinnamon stick and a couple of cloves in the evaporated milk, then strained them out.

Oatmeal Dinner Rolls

hot and steamy rolls, but very moist dough, needing 1/2 to 1 cup additional flour. I used bread flour. Had a strong yeasty flavor that might benefit from the addition of herbs. But otherwise, a good bread to go along with traditional American cuisine.

Crisp Oatmeal Cookies

They're crispy and light! Delicious as is. I also tried them with 0.5 tsp cinnamon. Also good. Helps to press them flat with a wet fork before baking.
