Roasted Beets and Sauteed Beet Greens

I didn't think I liked beets, but I've changed my mind after I got some homegrown beets from a friend and found this recipe. I nuked them until soft and then peeled them once they cooled down a bit. The stained fingers are well worth this delicious dish. I will be looking for fresh beets next time at the market!

To Die For Blueberry Muffins

Yup, this one's a keeper. I followed a reviewer's suggestion to reduce the butter in the topping and also didn't add any batter. Finished product had a beautiful crunchy top with a soft, sweet muffin underneath. This recipe made 9 regular muffins with overflowing tops. . . Gotta have plenty of muffin top!

I didn't think I was much of a beet fan, but I've changed my mind. After getting some fresh beets from a friend, I tried this recipe (microwaving, rather than roasting). Loved it! Quick and pretty easy (but stains your hands temporarily).

Kale Chips

Surpringly good! I used balsamic vinegar with great results. After reading other reviews, I baked these at 270 for 20 minutes, or just until crispy. They do shrink quite a bit, but a delicious way to sneak in those leafy greens! Definitely a keeper.

Liver Pate

Super smooth and creamy! I followed Dick Rebel's suggestions and didn't overcook the livers. I also finished it with a touch of truffle-infused oil. I didn't have any shallots but used vidalias instead. Delicious!

After reading the reviews, I decided to use kale instead of spinach, which worked wonderfully. If you want to stick with the spinach, I would only add it during the last few minutes of cooking. The kale can go into the crockpot at the beginning.

Mom's Prize Winning Raw Apple Cake

Delicious cake. I had a cup of sou half- n- half that I wanted to use up, plus I had about 3 cups of diced frozen golden delicious apples (unpeeled). Used both up in this recipe, substituting slices almonds for the walnuts that I didn't have. Came out great. I wouldn't hesitate to make this again.

Creamy Cheesy Grits

As you would with any grits recipe, you'll need to adjust the liquids to get desired consistency, but the flavor is excellent. Especially like the little kick from the cayenne. Easy to make. I'll definitely be making this again.

Made it exactly as written (excepted baked on a Silpat slid onto a baking stone). If you're used to handling "normal" yeast dough, this is a little tricky to deal with since it's not kneaded to an elastic state. Use flour generously. Whatever you do, do NOT skimp on the salt. The salt is what makes this dough manageable, such as it is. You'll have a huge gooey mess if you don't add enough salt. You will love the results! Reminds me a bit of those fresh Tuscan loaves from Italy!

Brussels Sprouts Gratin

Food Processor Chocolate Whipped Cream Frosting

Made it exactly as written, but doubled. It's the perfect frosting for my chocolate raspberry cake. The family loved it. I especially loved how quick and easy it is to put together. I recommend that you chill the cake, along with the mixing bowl and beaters.

I've tried many recipes, but this ones the best if you follow it exactly as written. Every oven is a little different, so I had to bake them for about 13 minutes. Delicious!

Country Green Beans

I've made this twice now: once exactly as written and once without the butter. Delicious either way, so I'll leave out the butter next time. It's important to use fresh, crisp green beans. A little leftover ham makes these beans just right!

Classic Dinner Rolls

I followed this recipe exactly and found these rolls to be tasty and beautiful. The texture is reminescent of those soft, homemade schoolhouse rolls-- tasty, but not exactly healthy. I'll try this next time with white whole wheat flour with some added gluten. For an old-fashioned treat, these rolls are delicious & easy to make.

Thai Cucumber Salad

Used a fresh red Thai chili, sliced into very thin strips, rather than the jalapeno. Beware: waiting a day makes this salad a lot hotter! Very tasty as is, but a squirt of fresh lime adds a nice zing.
